  • Avoid buying fruits with dark spots, bruises, or any signs of sliminess.
  • If you happen to buy unripe, hard sake, you can leave it outside for about 2 – 3 days; when the skin turns yellow and feels soft when pressed, it is ready for cooking.

  • You should choose large, round grains of glutinous rice that are opaque white, without any broken or crushed grains.
  • It is recommended to buy freshly milled glutinous rice, which has a natural fragrant smell.

How to prepare Sake Sticky Rice Dessert

  • Prepare and boil the sake

    Wash the sake and cut off the stem.

    Put a pot of water on the stove, when the water boils, add the sake and boil for about 10 minutes over medium heat.

    When the sake is just cooked, turn off the heat, take it out to cool slightly, peel off the skin, remove the pulp, and then cut it into small pieces.

  • Cook the sticky rice

    Put 100g of sticky rice in a pot and rinse it clean, then add 5 pandan leaves, slowly add water to the pot until it covers the sticky rice by about 1/4 of your finger, then stop.

    Place the pot of sticky rice on the stove and cook for about 20 minutes over medium heat until the rice is cooked.

    Tip: To make the dessert more fragrant, you can replace plain water with fresh coconut water when cooking the sticky rice.

  • Or you can scoop the dessert into a container, cover it tightly, and place it in the refrigerator. When eating, just take it out to reheat, and it can be used for about 2 – 3 days.
