  • When you flip the bề bề over, if the tail is reddish-pink, it indicates that the bề bề has eggs, which will give a rich flavor after cooking.
  • If buying frozen bề bề, you need to purchase from reputable places, ensuring that the packaging is intact, still within the expiration date, and has a clear origin to guarantee quality!

How to choose fresh rau ngót

  • Fresh rau ngót has thin but firm leaves, a light green color, and the leaves grow unevenly with some being eaten by pests.
  • You should avoid buying rau ngót that is dark green, has very young leaves, is uniform, and has no pest-eaten leaves.

  • Preparing bề bề

    The fastest way to peel bề bề is to use scissors for cutting. First, use scissors to cleanly cut off the legs of the bề bề and remove its head.

    Next, use scissors to puncture the last shell segment near the tail, inserting them right in the middle of the bề bề’s back and cutting upwards to the head.

    Then, use your hands to separate the bề bề shell to the sides and remove the bề bề meat from the shell by peeling it off closely alongside the bề bề meat.

  • Prepare other ingredients

    Remove the water spinach by pulling it off the stems with your hands, then wash the spinach thoroughly with water.

    Next, soak the water spinach in saltwater for about 5 minutes, then gently squeeze it with your hands to reduce its bitterness and toughness. Finally, drain the spinach in a colander.

    Tip: You can remove the water spinach faster using a colander with small holes. First, insert each branch into the small hole of the colander. Then, pull from the top to the end of the branch, and all the spinach will fall into the colander.

  • Cook the soup

    Place a pot on the stove, add 500ml of water, and bring it to a boil. When the water is boiling vigorously, add the water spinach to keep its green color.

    Season the soup with 1 teaspoon of seasoning powder and 1 teaspoon of monosodium glutamate. Then, cover and cook for another 5 minutes until the spinach is tender.

    Meanwhile, marinate the shrimp with minced garlic, 1 tablespoon of fish sauce, and 1 teaspoon of monosodium glutamate. Then, place another pot on the stove and sauté the shrimp over high heat until cooked, then turn off the heat.

    Scoop the soup into a bowl and place the shrimp on top to finish.

    Note: You can also sauté the shrimp directly in the soup pot; when the shrimp is slightly cooked, pour in the boiling water, then add the spinach to cook and season to make the soup sweeter and more appealing!

  • Final Product

    The mantis shrimp is chewy and delicious, sweet meat, stir-fried just right, cooked with fresh green water spinach, making it a uniquely tasty soup to go with rice. The soup after cooking still retains the fresh green color of the water spinach, and eating it with white rice is simply wonderful!
