    Fresh noodles should be blanched in boiling water for about 30 seconds, then removed and drained.

    Wash the green onions, then cut them in half, keeping the bulbs whole and chopping the leaves finely.

    For garlic, peel, wash, and finely chop it, dividing it into two equal parts.

    Wash the lemongrass, crush 2 stalks, and slice the remaining 4 stalks into thin rounds before pounding them in a mortar, or you can use a knife to chop them finely.

    For the accompanying herbs, you should buy various herbs that will be more suitable. After purchasing, remove any spoiled parts and soak them in salted water for about 10 – 15 minutes. Then rinse with water and drain.

  • Marinate the pork hock

    Place the pork hock into a small bowl and marinate with a mixture of ingredients including: crushed lemongrass, 1/2 of the minced garlic, 1 teaspoon of chili powder, 1 teaspoon of monosodium glutamate, 1 teaspoon of salt, and 1 tablespoon of sugar.

    Then mix the pork hock thoroughly with the spices and let it sit for about 10 minutes for the pork to absorb the spices evenly.

    Add 3 tablespoons of cooking oil into a pot and wait for the oil to heat up, then add 3 tablespoons of annatto oil, the remaining garlic, and 1 teaspoon of chili powder into the pot, and continue to sauté until the garlic is fragrant.

    Next, add 2 liters of water and 2 crushed lemongrass stalks, bring to a boil over high heat, and when the water starts to evaporate and simmer, add the marinated pork hock to stew. Wait for the water to boil, cover, reduce the heat to medium, and stew for about 30 – 40 minutes until the pork hock is tender.

    When the pork hock is cooked, season with a mixture of spices including: 2 teaspoons of monosodium glutamate, 2 teaspoons of salt, 1 tablespoon of rock sugar, and 1 teaspoon of fermented shrimp paste. Stir gently and cook for another 5 minutes, taste again to adjust the seasoning, then turn off the heat.
