How to Choose Good Sticky Rice

  • Choose sticky rice grains that are large and uniform in size, opaque white, shiny on the outside, and not broken.
  • Avoid sticky rice grains that are dusty, fuzzy, or yellow in color.
  • Additionally, good sticky rice will have a natural aroma, characteristic of the rice variety. In contrast, sticky rice that has been stored for a long time often loses its scent and won’t retain its deliciousness when cooked.
  • You can taste the sticky rice with your mouth; if it has a slight sweetness and no strange smell, then it is good sticky rice.

    When the water boils, add the cleaned glutinous rice, ginger juice, sliced ginger, about 1/2 teaspoon of salt, and 2 teaspoons of white sugar.

    Cook the dessert on low heat until the glutinous rice is soft and expands, and the mixture is slightly thick.
