How to choose good, plump red beans
- Make sure to choose small, round red beans instead of large red beans.
- Choose beans that are bright red, free from pests, and show no signs of mold or unpleasant odors.
- Select beans that are plump; if you press them with your fingernail and they feel firm without crumbling, they are fresh beans.
- Avoid choosing beans that are too large, as they often don’t taste as good, have fewer nutrients than smaller beans, and particularly tend to have a slight bitterness when eaten.
How to make Red Bean Dessert with Rock Sugar

Wash and soak the red beans
First, wash the red beans thoroughly, remove any damaged or shriveled beans, then soak them in warm water for about 4 – 5 hours to allow the beans to swell.
Tip: To make the red beans swell faster, remember to change the warm water regularly while soaking! -
Cook the red bean dessert with rock sugar
Place a pot on the stove, add the soaked red beans and 2 liters of water, cover, and cook the beans on high heat until the water in the pot boils.
Then, reduce the heat to low and continue cooking the beans for about 1 hour and 15 minutes until the beans are soft.
After the beans are soft, add 350g of rock sugar, a little salt, and 1 vanilla pod, stir well until the sugar dissolves.
Tip: If you want the dessert to be thicker, you can dilute about 1 tablespoon of tapioca starch with water, then gradually add it to the pot until the dessert reaches the desired thickness. -
Final Product
Scoop the sweet into a bowl, add a little crispy jelly on top to enjoy right away.
