Amaranth 300 gr Beef 200 gr Garlic 4 cloves (minced) Ginger 1 root (smashed) Cooking oil 1/2 tablespoon Common spices A little (salt/ seasoning powder/ monosodium glutamate)

How to choose fresh beef

  • When buying, you should press the piece of beef with your hand; if it is good beef, it will have good firmness and elasticity, not sticky to the hand, and there should be no unpleasant odors.
  • You should choose pieces of meat that are small and tender, with fine fibers, and when pressed, they should have good elasticity.
  • You should not buy pieces of beef that are pale green or dark red, with dark yellow fat, white spots on the fibers, and a slimy feel when touched.

How to choose delicious water spinach

  • Choose water spinach leaves that are still fresh and green; when pressed with your hand, they should feel crisp and have a slimy substance oozing from the leaves.
  • Choose leaves that are of moderate size, not too large and not too small.
  • Do not choose wilted, bruised, or torn leaves.

How to make Water Spinach Soup with Beef

  • Prepare the ingredients

    After buying the beef, rinse it with clean water. To eliminate the odor of the beef, take 1 ginger root, crush it, and rub it all over the piece of meat for about 2 minutes.

    How to clean beef without odor:

    • Method 1: Roast 1 ginger root until cooked, scrape off the burnt outer layer, then pound the ginger and rub it on the beef; let it sit for about 3 minutes and then rinse with clean water.
    • Method 2: Alternatively, you can use vinegar or white wine to wash it, which also helps clean and eliminate the beef odor effectively.

    After that, rinse the meat with diluted salt water and then rinse again with clean water. Marinate the meat with 1/2 tablespoon of seasoning, 1/2 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, minced garlic, and let it sit for about 30 minutes for the meat to absorb the spices.

    Pick the tips and young leaves of the water spinach, then wash them clean and let them drain.

  • Cook the soup

    Place a pot on the stove, add 1/2 tablespoon of cooking oil into the pot. When the oil is hot, add the marinated beef and stir-fry on high heat for about 2 minutes until the beef is just cooked, then scoop it into a bowl.

    Add 1 liter of water into the pot where you just stir-fried the beef and bring it to a boil. Once the water is boiling, add the Malabar spinach, 1 teaspoon of seasoning, and the previously stir-fried beef.

    Boil until the water comes to a boil again, then taste and adjust the seasoning to your liking, and turn off the stove.
