Prepare the ingredients
Peel the fragrant gourd, wash it clean, and cut it into bite-sized pieces. Wash the coriander, drain, and chop it finely.
Pick out any bad peanuts (if any), rinse them once with clean water, and then put them in a mortar to grind finely. After grinding the peanuts, remove some of the peanut skins.
Tip: To keep the fragrant gourd crunchy and not too soft, when peeling, make sure to peel off only a thin layer of the outer skin. -
Cooking the soup
Place a pot on the stove, add 1 teaspoon of cooking oil to the pot. When the oil is hot, add peanuts and stir for about 2 minutes until fragrant.
