  • Preferably select long and evenly sized fruits; smaller or medium-sized ones are better, as they are younger and tastier.
  • Avoid selecting overly ripe fruits with many black spots and scratches, as well as those that are rotten.

How to choose delicious peanuts

  • You should select large, round peanuts that feel firm when pressed with your fingers.
  • Choose peanuts with bright, even shells and avoid those with many shriveled nuts mixed in.
  • Additionally, you should sniff them; do not purchase those that have a musty smell, as they will not taste good and contain fewer nutrients.

  • Prepare the ingredients

    Peel the fragrant gourd, wash it clean, and cut it into bite-sized pieces. Wash the coriander, drain, and chop it finely.

    Pick out any bad peanuts (if any), rinse them once with clean water, and then put them in a mortar to grind finely. After grinding the peanuts, remove some of the peanut skins.

    Tip: To keep the fragrant gourd crunchy and not too soft, when peeling, make sure to peel off only a thin layer of the outer skin.

    Place a pot on the stove, add 1 teaspoon of cooking oil to the pot. When the oil is hot, add peanuts and stir for about 2 minutes until fragrant.

    Next, add 1 liter of water to the pot, cover it, and bring it to a boil. When the water boils, skim off the foam, and add about 1 teaspoon of salt along with the gourd.

    Wait for the soup to boil again, then season with 1 tablespoon of vegetarian seasoning, stir well, and cook for another minute.

    Finally, adjust the seasoning to taste, ladle the soup into a bowl. Add chopped cilantro and ground pepper to enhance the aroma, and it’s done.
