- Choose amaranth bundles with bright green or red leaves, and the leaf stems should be firm and not soft.
- Try breaking off a small piece of the amaranth stem; if the surface that was broken has a lot of sticky liquid, it means the amaranth is fresh and delicious.
- Do not buy bundles of amaranth that are soft, bruised, or waterlogged, or have yellow spots on the leaves, as these are usually caused by pests or excessive pesticide application.

With 300g of Amaranth bought, you pick the tops and young leaves, then wash them clean with water and let them drain.

Cook the soup
Place a pan on the stove over medium heat, add 1 teaspoon of cooking oil to the pan. When the oil is hot, add all the marinated beef, stir-fry for about 2 minutes until the meat is firm, then scoop it out into a bowl.
Put a pot on the stove, use a little water to rinse the pan where you just stir-fried the meat and add it to the pot along with 1 liter of water, cover and bring to a boil. When the water boils, turn the heat up high, add the Amaranth along with 1 tablespoon of seasoning and 1 teaspoon of salt.
Wait for the water to boil again, then add all the stir-fried beef, stirring gently. Season to taste and turn off the heat.
