How to choose fresh shrimp

  • When buying frozen shrimp, you should choose those that still have a natural bright red color, the packaging is intact, and you need to check the expiration date on the packaging carefully. It is advisable to buy shrimp at reputable frozen seafood shops or supermarkets to ensure quality.
  • For fresh shrimp, you should choose those with a transparent outer shell, still slightly smelling of seawater, and fresh shrimp usually have their tails curled together.
  • Avoid choosing shrimp with tails spread out as this may indicate that the shrimp has been injected with water to increase weight.
  • Additionally, you should definitely not buy shrimp with curved backs forming a circular shape or showing signs of leaking slimy liquid as these are shrimp that have been stored for a long time, are no longer fresh, and when cooked will not ensure the delicious flavor of the dish.

Ingredients for zucchini soup with shrimp

How to make Zucchini Soup with Shrimp

  • Prepare the ingredients

    Let the shrimp thaw at room temperature, then wash and chop them finely.

    For the zucchini, peel it, use a knife to cut off both ends and slice it to about 1/2 finger thickness.

    For the onion, peel it, wash it, and slice it thinly.

    Finally, the green onion will have its roots cut off, washed, and diced finely.

  • Cook zucchini soup

    You place a pot on the stove, add 1 tablespoon of cooking oil. When the oil is hot, continue to add sliced onion and sauté for about 30 seconds over high heat, then add minced shrimp.

    Next, you will season the ingredients with: 1 tablespoon of monosodium glutamate, 1 tablespoon of seasoning powder, 1 tablespoon of salt, and stir-fry for another minute.

    Then add 700ml of water, cover the pot and bring to a boil. When the soup is boiling, add the sliced zucchini and cook until it boils again, then lower the heat, leaving the lid off. Simmer for about another 5 minutes, then add the finely chopped green onions that you prepared earlier, taste and adjust the seasoning to your liking, and turn off the heat.

    Finally, you will serve the soup in a bowl and enjoy it with hot rice.
