Prepare the sturgeon
After purchasing the sturgeon, remove the intestines and gills.
Use salt and vinegar to rub all over the fish for about 2 minutes to remove the slime, then rinse with cold water until clean and let the fish drain.
Then, cut the fish into bite-sized pieces, about the size of two fingers.
How to Clean Sturgeon Without Fishy Smell
- To clean the sturgeon without a fishy smell, make sure to thoroughly remove the fins, scales, and internal organs, as well as the blood vessels, and rinse several times with water.
- Use salt, ginger, or white wine to rub on the fish for about 5 – 10 minutes, then rinse with water.
- Alternatively, you can soak the fish in salt and white wine for about 10 minutes. Or pour boiling water at about 60 degrees over the fish and use a knife to scrape off the slime.

Tomatoes washed, cut into wedges. Vietnamese balm, green onions washed, chopped.
Shallots, garlic peeled, sliced thinly. Chili cut in half, one half sliced, the other half left whole. Galangal washed, peeled, minced. Lemongrass washed, chopped.
Pineapple cut lengthwise into small slices, core removed, then minced.
Add tomatoes, pineapple, one half of the chili, galangal, lemongrass into a blender and blend until smooth.
Quick and simple way to peel pineapple
- First, cut the pineapple lengthwise into 4 equal parts.
- Continue cutting along the length of the pineapple pieces, then stop at the end of the fruit and cut firmly to remove the flesh and discard the skin.
- Avoid cutting too close to the skin to prevent leaving any eyes of the pineapple. Finally, cut into small pieces as needed.

Cooking hot pot
Place the pot on the stove, turn on to medium heat, add 2 tablespoons of cooking oil. Wait for it to heat up, then sauté minced shallots, garlic, lemongrass, and galangal.
Next, add tomatoes, pineapple, and 2 liters of water to the pot and bring to a boil. Once boiling, add sturgeon and bring the water back to a boil.
Season the hot pot broth with 1 packet of Thai hot pot seasoning, 2 tablespoons of ketchup, 2 tablespoons of sugar, 5 tablespoons of calamansi juice, 1/2 tablespoon of fish sauce, 1 teaspoon of seasoning powder, and 1/2 tablespoon of salt.
When the hot pot broth is boiling, adjust the seasoning to taste, add herb greens, scallions, and sliced chili, and it’s ready to serve.
