How to choose fresh catfish
- You should choose live catfish with shiny skin.
- The body of the fish should not be scratched or have any unusual signs, and the eyes should be clear and slightly bulging.
- When buying, pay attention to choose catfish with a slightly pointed head to avoid mistakenly buying bullhead catfish which has a large and broad head.
- You should not buy those that are already dead or have cloudy eyes because when eaten, the meat is usually very mushy and not tasty.
How to choose fresh passion fruit
- Choose fruits that are purple-red (for red passion fruit) or bright yellow (for yellow passion fruit) because the deeper the color, the riper the fruit, and the sweeter the taste.
- Naturally ripe passion fruit will have a very characteristic fragrance, easily recognized by smelling it, avoid buying those with strange odors.
- You should hold the passion fruit and check; if it feels heavy and the size corresponds to its weight, then it should be purchased.
- Additionally, you should buy fruits that feel not too hard when squeezed because hard fruits are usually still unripe.

How to prepare Passion Fruit Catfish Hot Pot

Prepare the catfish
After buying the catfish, remove the intestines and cut it into pieces about the thickness of a finger. Soak in diluted salt water for 10 minutes. Then take it out, rinse with water several more times to clean, and let it drain.
Tip: When soaking the catfish in salt, you can add 5 slices of ginger to the water to help eliminate the fishy smell more effectively. -
Prepare other ingredients
For passion fruit, cut it in half, scoop out the pulp into a bowl, and squeeze to extract the juice into another bowl.
Peel the shallots, wash them clean, and slice thinly. Similarly, wash the bird’s eye chili and red chili, drain them, and chop the red chili into small pieces.
For the water spinach, basil, and other herbs, pick out the old, wilted parts, then wash them clean. Cut the herbs into bite-sized pieces, about the length of one finger segment.
The basil should be cut off at the stems.
For enoki mushrooms, cut off the stems, separate them, and wash them clean, then drain. Wash the tomatoes and cut them into wedges. Peel the ginger, wash it clean, and mince finely.
Wash the cabbage with diluted salt water, then slice it thinly. Rinse the banana flower with salt water and let it drain.

Make the dipping sauce for the hotpot
Add 2 teaspoons of boiled and cooled water, 3 tablespoons of fish sauce, 1 teaspoon of sugar, chili, and minced ginger into the bowl of passion fruit juice.
Then stir the dipping sauce mixture well until the ingredients dissolve, and we have a complete hotpot dipping sauce!

Cooking Hot Pot
Place a pot on the stove, add 2 tablespoons of cooking oil, and sauté the thinly sliced shallots until fragrant. Once fragrant, remove the shallots and add the passion fruit pulp, stir-frying for about 1 minute.
Then add 200ml of coconut water and cook for about 2 minutes, then strain out the passion fruit seeds from the pot, and add another 200ml of water.
Next, add a piece of cinnamon stick and Thai basil to the pot to enhance the flavor of the hot pot broth. Once the hot pot is boiling, remove the Thai basil and cinnamon stick.
Add the fried shallots, bird’s eye chili, 10g of rock sugar, and 1 tablespoon of seasoning powder. Then add the fish, and wait until the fish is cooked, then add mushrooms, water mimosa, banana flower, cabbage, and tomatoes to complete the dish.
