How to choose fresh pork hock

  • It is advisable to prioritize buying the hind leg, as this will yield better meat. Fresh pork hock is one that still has hooves; after purchasing, you can ask the seller to chop it up.
  • If buying pre-sliced pork hock, you should choose a piece that is firm, with even fibers, a dry cut surface, and a bright pink color. When you press your finger on the meat, it should have a good bounce back.
  • Do not buy meat that has a foul or fishy smell, has changed color and is no longer bright red or pink, or has strange spots on it, as this indicates the pork hock is no longer fresh.

How to choose fresh beetroot

  • Prioritize selecting firm beetroot that is not soft, with smooth skin and still has leaves.
  • Choose beetroot with a round bottom rather than flat-bottomed ones. These are sweeter and tastier.
  • You should buy small to medium-sized beetroot, as larger ones tend to be hard and less flavorful.

How to make Beetroot Pork Knuckle Soup

  • Prepare and blanch the pork knuckle

    Wash the pork knuckle with diluted salt water, then to remove the smell, put the pork knuckle in a pot with 1 liter of water and 1 sliced piece of ginger, boil for about 1 minute until the water is boiling, then take the pork knuckle out and wash it clean.

    How to clean pork knuckle thoroughly, without smell:
    • You can ask the seller to chop the pork knuckle in advance for convenience. Cut into pieces about 2 finger joints thick.
    • When bringing the pork knuckle home, use 1 – 2 teaspoons of salt or lemon juice (vinegar, rice wine) to rub on the surface of the pork knuckle, let it sit for about 2 – 3 minutes and then rinse with cold water.
    • Alternatively, you can briefly boil the pork knuckle with 1 piece of purple onion after cleaning, which can also effectively remove the smell of the pork knuckle.

    Peel the beetroot, wash it thoroughly, and cut it into bite-sized pieces. Remove the roots and wilted leaves from the green onions, wash them, and chop them finely.

  • Stew pork leg with beetroot

    Place a pot on the stove, add the blanched pork leg and 1 liter of water, then bring to a boil.

    Once boiling, skim off the foam, reduce the heat, add 1 teaspoon of salt, 1 tablespoon of seasoning powder, then cover and simmer the pork leg for 15 minutes.

    Next, add the beetroot to the pot along with 1 teaspoon of salt, 1/2 teaspoon of monosodium glutamate, and simmer for another 10 minutes.

    Finally, when the pork leg and beetroot are cooked, taste and adjust the seasoning as needed, then ladle the soup into a bowl. Sprinkle chopped green onions and ground pepper on top for extra appeal, and you can enjoy it right away.
