Prepare the ingredients
Wash the sour cucumber under water about 3 times. Then, squeeze out some of the water in the cucumber to reduce the saltiness and sourness. Next, drain and cut into small bite-sized pieces.
Cut the beef belly into small bite-sized pieces.
Peel and finely chop the garlic. Wash the tomatoes, drain, and cut into wedges.
Cut off the roots of the green onions, wash them, cut the green parts, and split them in half. Slice the chili thinly.

Marinate the beef
Add the beef into a bowl along with seasonings including: 1 tablespoon of seasoning powder, 1 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, and 1 tablespoon of cooking oil, mix well to allow the seasonings to absorb into the beef. Marinate for about 10 minutes for the beef to soak up the flavors.

Stir-fry the sour melon
Place a pan on the stove, add 1 tablespoon of cooking oil, wait for the oil to heat up, then add 1/2 minced garlic and sauté until fragrant.
Next, add tomatoes and pickled mustard greens into the pan and stir well, then season with: 1 tablespoon of seasoning powder, 1 teaspoon of sugar, 1/2 teaspoon of monosodium glutamate, and 1 tablespoon of fish sauce.
Stir for the seasonings to absorb for about 3 minutes, then turn off the heat.

Stir-fried beef
Put a pot on the stove, add 1 tablespoon of cooking oil, wait for the oil to heat up, then add the remaining minced garlic to fry until fragrant.
Next, add the beef and stir well until the meat is firm, then add 600ml of water to the pot and bring it to a boil.

Cook pickled mustard greens soup with beef
When the water is boiling, add the sautéed tomato and pickled mustard greens mixture into the soup pot, continue boiling until it comes to a rolling boil again, then season to taste.
Next, add the green onion tops and boil for another minute before turning off the heat.
Finally, serve the soup in a bowl, add a few thin slices of chili, and enjoy immediately!
