  • Choose squid that has a bright shiny color, these are fresh squids.
  • Use your hand to press it, if it feels firm and elastic, with no dents after pressing.
  • Fresh squid will have bright white eyes, and you can see the pupils.
  • To distinguish fresh squid by its tentacles, pay attention to the tentacles at the base of the squid. The more tentacles cling to the base, the fresher the squid will be.

  • Prepare the ingredients

    Squid that has been prepped can simply be washed with water several times and drained before cooking.

    Pineapple is peeled, cored, washed, and cut into bite-sized pieces. Tomatoes are washed and cut into wedges.

    How to clean squid and eliminate the fishy smell:
    • First, remove the squid’s head and gently pull out the ink sac. If you accidentally break the ink sac, wash it clean with water.
    • Next, use a knife to cut off the eyes and teeth of the squid, then peel off the skin.
    • Clean the intestines and head of the squid and wash it several times with water.
    • To eliminate the smell, you can soak the squid in diluted salt water/white wine/lemon or vinegar for about 10 minutes, then rinse with water.

  • Marinate the squid

    Marinate the squid with: 1 teaspoon of salt, 1 teaspoon of sugar, 1 teaspoon of monosodium glutamate, 1 teaspoon of seasoning powder, 1/2 teaspoon of pepper, 1 teaspoon of minced shallots, mix well, and let it rest for about 15 minutes for the squid to absorb the seasoning.

    Heat a pan on the stove with 2 tablespoons of cooking oil over medium heat. Once the oil is hot, add the marinated squid and tomatoes, stir-frying until the squid firms up.

    Then add 1.5 liters of filtered water, bring to a boil, and then add the pineapple.

    Season with 1 teaspoon of salt, 1 teaspoon of seasoning powder, 1 tablespoon of sugar, 1/2 teaspoon of pepper, stir well, and boil for about 5 minutes.

    Adjust the seasoning to taste, then turn off the heat and add the chopped green onions and cilantro, and it’s ready to enjoy.
