Ingredients for Sour Soup with Eel For 4 people

Eel 800 gr Tomatoes 2 pieces Shallots 2 bulbs Spring onions 2 stalks Dill 3 stalks Ginger 1/3 bulb Turmeric 1/3 bulb Sour fruits 4 pieces (or 10gr ripe tamarind filtered for juice) Chili 1 piece Cooking oil 1 tablespoon Vinegar a little Seasoning a little (sugar / salt / seasoning powder)

How to choose fresh and delicious eel

  • If choosing live eel, you should select those that still move actively
  • Fresh eel has a silver-gray color, a clear body, with tiny pink blood spots, and bright red gills.
  • The more spoiled the eel is, the darker and purpler it becomes, with a cloudy white body, soft and mushy, and an unusual rotten smell, so do not buy it!

How to prepare Sour Fish Soup with Snakehead Fish

  • Prepare and marinate the fish

    Ginger and turmeric should be peeled, washed clean, and crushed.

    To eliminate the fishy smell of snakehead fish, wash the fish with a mixture of saltwater and vinegar, then rinse with clean water.

    How to clean snakehead fish to be slimy-free and odorless

    • Clean the snakehead fish with salt and vinegar: With this method, simply mix vinegar with a little salt and gently rub it over the fish’s body; the fish will be free of slime and significantly reduce the fishy smell.
    • Clean snakehead fish with kitchen ash: If you have kitchen ash at home, the cleaning process is very simple. Just put the snakehead fish into a basin of ash, then use the ash to rub along the direction of the fish’s body. This method can most effectively remove slime and the fishy smell.
    • Clean the fish’s slime with flour: Use flour on the fish, then rub off the slime and rinse with water.

    Mix the fish evenly with crushed ginger and turmeric, 1 teaspoon of salt, and 1 teaspoon of seasoning. Marinate the fish for about 15 minutes to allow it to absorb the flavors.

    Tip: Ginger and turmeric will help eliminate the fishy smell and give a beautiful yellow color to the dish.

    Shallots should be peeled, washed clean, and sliced thinly.

    Green onions and dill should be washed clean. Cut the green onion bulbs into pieces, and chop the green leaves of the green onion and dill finely.

    Tomatoes should be washed clean and cut into wedges.

    The sour fruits should be washed clean, scored on the skin or sliced.

  • Cooking the soup

    Place a pot on the stove, heat 1 tablespoon of cooking oil, then add sliced shallots and sauté until fragrant. Next, add tomatoes and stir-fry until soft, then add the sour fruits and 1 teaspoon of salt and stir-fry together. Stir-fry for about 1 minute, then add 500ml of water.

    When the water boils, season with 2 teaspoons of sugar, stir well, and then add the fish, simmering until the water boils again, then cut in 1 chili pepper.

    Boil for an additional 3-5 minutes until the fish is cooked, then add green onions and dill before turning off the heat.

    Note: During cooking, limit stirring the fish to avoid it breaking apart, as the fish is very soft.
