How to choose clean, safe pork bones
- You should buy pork neck bones that are bright pink and have a characteristic aroma.
- It is best to choose pork bones with a clear origin to ensure safety.
- Absolutely do not buy bones with bruises or pale colors, strange or rotten smells. Because that is a sign that the pig is sick.
- Do not buy pork bones that are excessively frozen, because if too cold, the bones will not have many nutrients left.
How to choose good pickled radish
- You should choose pickled radish that has a natural brown color, not too dark, and shows no signs of mold.
- Good pickled radish will have a strong salty aroma and be soft and chewy.
- Additionally, to ensure safety, you can also make pickled radish at home following the recipe shared by TasteVN with just a few simple steps.
How to make Pickled Radish Soup (xá bấu)
-
Prepare the pickled radish
After purchasing the pickled radish, use a knife to cut it into thin slices.
Put the sliced radish into a bowl of cold water. Gently rub the pickled radish, rinsing it several times until the water is clear. Then squeeze it to remove excess water.
Place a pot on the gas stove, add the pickled radish and enough water to cover it. Cook until the water boils for about 2 – 3 minutes, then remove the pickled radish into a colander to drain.
You can taste it; if it’s still salty, cook for another 2 – 3 minutes.
Tip:To quickly reduce the saltiness of the pickled radish, you can soak it in water mixed with a little salt for about 5 – 10 minutes. Then remove it and drain.
-
Prepare and boil the pork bones
Wash the pork bones thoroughly with diluted salt water. Then chop them into bite-sized pieces.
Place a pot on the gas stove and add 1 liter of water. When the water boils, add the pork bones and boil for 5 – 10 minutes.
Finally, remove the pork bones and rinse them with water.
Tip:To effectively eliminate the smell of the pork bones, you can add a few crushed lemongrass stalks to the pot while boiling.

Cooked Pickled Radish Soup
Put a pot on the gas stove and add 3 tablespoons of cooking oil.
Once the oil is hot, add 2 teaspoons of minced garlic. Sauté until the garlic turns light brown.
Next, add the boiled pork bones and stir well for about 1 minute, then add about 3.5 liters of water to the pot.
Season with 1/3 teaspoon of salt and 3 teaspoons of sugar, then cook over high heat until the water boils.
When the water boils, reduce the heat to medium and continue to cook for 45 minutes.
The next step is to add the pickled radish to the pot, continuing to cook over medium heat for about 15 – 20 minutes. Then taste and adjust the seasoning as needed before turning off the heat.
Tip:To keep the soup clear, immediately after the water boils, skim off any foam on the surface.
-
Completion
After cooking for over 1 hour, the soup is done. At this point, add the green onions to the pot, stir well, and then ladle the soup into a bowl to finish.
