Ingredients for Sweet and Sour Cashew Fruit Soup For 4 servings

Snakehead fish 2 fish Cashew fruit 4 fruits (should buy the medium ripe type) Bean sprouts 200 gr Spring onion/cilantro A little Red onion 2 bulbs Tamarind juice 2 tablespoons Cooking oil 6 tablespoons Common spices A little (seasoning/ sugar/ salt)

How to choose good, sweet cashew fruits

  • Choose cashew fruits that have shiny, smooth skin, with yellow or natural reddish color; those are the ripe cashew fruits.
  • Use your nose to smell; when the cashew fruit is ripe, it will have a light sweet fragrance, and when eaten, it will be sweet, not too bitter.
  • Avoid buying cashew fruits with many dark spots or deep bite marks left on them; also, avoid buying overly soft ripe cashew fruits, as they will easily get mashed during cooking.

How to make Sour Cashew Nut Soup

  • Prepare the ingredients

    When buying cashew nuts, cut off the seed and top, rinse with water, then use a knife to cut into wedges.

    Shallots peel and chop finely. Culantro and green onions cut off the ends, wash clean, and chop small.

    Clean the fish by removing the intestines, then rinse with diluted salt water to eliminate the fishy smell, and rinse again with clean water.

  • Fry the fish

    Place a pan on the stove, add 4 tablespoons of cooking oil. Wait for the oil to heat up, then add the fish, frying until the fish is golden brown on both sides.

  • Cook the soup

    Place a pot on the stove, add 2 tablespoons of cooking oil, wait for the oil to heat up, then add minced shallots and sauté until fragrant.

    Next, add the cashew fruit that has been cut into pieces along with 1 tablespoon of salt, 1 tablespoon of sugar, and 2 tablespoons of seasoning powder, stirring gently so that the fruit absorbs the seasoning.

    Then, add about 1.3 liters of boiling water and 2 tablespoons of water extract, then add the fried fish and cook together for about 10 minutes.

    Finally, add bean sprouts, chopped green onions, and coriander, then season to taste and turn off the heat.
