  • Prepare the ingredients

When buying red tilapia, you can ask the seller to clean the fish for you. After bringing it home, you just need to rub the fish with a little salt, then rinse it with clean water and cut it into bite-sized pieces, and let it drain.

How to prepare red tilapia without a fishy smell

    • Method 1: One of the most common methods is to soak the fish in a diluted salt water solution to help eliminate the fishy smell. After washing the fish clean, soak it in water, add 2 tablespoons of salt, and let it soak for 15 minutes, then rinse again with clean water.
    • Method 2: Soak the cleaned fish in water mixed with lemon or vinegar for about 5 – 10 minutes, then take it out and rinse it clean again. This method not only helps reduce the fishy smell but also removes the slime present in slippery fish.
    • Method 3: After cleaning and rinsing the fish, simply marinate it with a little white wine for about 2 minutes to ensure that the final dish will not have any fishy smell.

Pineapple should be washed clean, remove the skin, and then cut into bite-sized pieces. Tomatoes should be washed clean, remove the stem, and then cut into wedges. Onions should have their skins removed, washed clean, and then sliced thinly into rounds or cut into wedges as desired.

For 1 bulb of shallot, remove the outer skin and wash it clean, then let it drain. Put it in a mortar and pound it together with 1 teaspoon of pepper and 1 chili pepper with the stem removed.

How to Choose Fresh Ingredients

How to Choose Fresh Pink Fish

  • The best pink fish to buy are those that are still alive, swimming vigorously, with a bright pink diamond shape, and shiny scales. When holding the fish, it should feel thick, indicating it has a lot of meat. Choose fish larger than 1kg as they will have fewer bones and be firmer.
  • If you can’t buy live fish, choose those with clear eyes, red gills, a bright color, and when pressed, the flesh should feel firm and elastic. The fish should be dry, without any sliminess.

How to choose fresh, delicious tomatoes

  • Good tomatoes have a bright red color, shiny, plump, with tiny specks visible on the skin; when cut in half, if the seeds turn yellow, the tomato is ripe and delicious.
  • In addition, if the tomato still has the stem firmly attached, it is fresh and recently picked. Smelling the tomato will give off the characteristic aroma of vine-ripened tomatoes.
  • Do not buy tomatoes that are still green; unripe tomatoes contain toxins that are not good for the body. Additionally, if you squeeze the tomato and it feels soft and mushy, or if the skin is scratched or has bee sting marks, do not buy it.
