  • Brisket, also known as beef breast, is the meat part next to the cow’s ribs. There are 3 types of brisket: rib brisket, belly brisket, and flank brisket (which is gradually towards the cow’s rear).
  • To buy good brisket, you should choose pieces with a lot of meat and connective tissue, bright color, and good elasticity when pressed with your hand.
  • You should not choose brisket that is dull in color, has a strange odor, or feels mushy and slimy when touched.

How to choose fresh and delicious leeks

  • When buying leeks, you should choose those that are still fresh, with medium-thick stems, white bulbs, green leaves, leaves that are not wilted, and not bruised.
  • Additionally, avoid selecting leeks that are wilted, bruised, or have yellow leaves.
  • When purchasing leeks, you should buy from reputable vegetable stores, and when buying, check the packaging, production date, and origin to ensure the quality of the dish when preparing.

  • Prepare the ingredients

    After buying, wash the beef brisket with diluted salt water, rinse it again with clean water, drain, and then slice it thinly for eating.

    Marinate the beef brisket with 1 teaspoon of salt, 1 teaspoon of ground pepper, and half of the chopped shallots. Marinate the beef brisket for 20 minutes to allow the spices to absorb evenly.

    Wash the leeks and slice them thinly.

    Cut the green onions into pieces about 2 finger lengths, keeping the root and top parts separate.

  • Boil the rice noodles

    First, rinse the dry rice noodles in clean water, then put them into a pot, bring 200ml of hot water to a boil over high heat, and pour it into the pot containing the rice noodles. Cook the noodles on low heat for about 3 minutes until they are soft.

    Once the noodles are cooked and begin to turn opaque white, transfer them to a strainer to drain.

  • Make the broth

    Place a pot or large pan on the stove, heat 2 tablespoons of cooking oil over medium heat, then add the beef and sauté for about 5 minutes until browned.

    Next, add 1 liter of filtered water to the pot, bring to a boil, then lower the heat to simmer the beef for 30 minutes until tender.

    Then, add the chopped green onions and the roots, season the broth with 1 teaspoon of salt, 2 teaspoons of fish sauce, 1 teaspoon of seasoning powder, and 1/2 teaspoon of monosodium glutamate.

    Continue to simmer the broth for another 10 minutes on low heat, then adjust the seasoning to taste before turning off the heat.
