Prepare the chicken
Wash the chicken thoroughly with water. Then, rub a mixture of vinegar and salt onto the chicken for about 5 – 10 minutes and rinse it again with water, letting it drain.

- Method 2: Before cooking, massage the chicken with white wine and a few smashed slices of ginger and let it sit for about 30 minutes.

Prepare other ingredients
First, finely chop 100g of shallots and set aside.
Next, add 1 teaspoon of Egyptian cumin seeds, 1 teaspoon of coriander seeds, 2 teaspoons of sesame seeds, and 5 dried chilies into the pan.
Place the pan on the stove and start to roast the ingredients over low heat for about 2 minutes.
After roasting, put the ingredients into a blender, add 2 teaspoons of shredded coconut, and blend for about 1 minute.
Once the mixture is finely blended, add 30ml of water and continue blending until the mixture becomes smooth and thick.

Marinate the chicken
Marinate the chicken with 1/2 teaspoon of salt, 1 teaspoon of turmeric powder, 2 tablespoons of chili powder, and 2 tablespoons of garlic-ginger sauce.
Next, mix the chicken with all the spices until the chicken is evenly coated, then marinate the chicken for 1 hour.
Tip: To substitute for the garlic-ginger sauce, you can use minced ginger and garlic. -
Make curry sauce
Place a pan on the stove, add 45ml of cooking oil and 6 fresh chili peppers to the pan and heat over medium heat.
When the oil is hot, add 100g of previously prepared shallots to the pan and stir well for about 5 minutes.
After 5 minutes, add the previously blended and thickened mixture into the pan, season with 1/2 teaspoon of salt, and stir continuously for about 5 minutes.

Chicken with curry mixture
After 5 minutes, add the marinated chicken to the curry sauce mixture in the pan, stir continuously for 5 – 7 minutes over low heat so that the chicken absorbs the curry sauce evenly.

Spicy Chicken Curry
After 7 minutes, add 200ml of water to the chicken curry pan and cover it to cook the spicy chicken curry.
Cook the mixture for 20 minutes on low heat.
After 20 minutes, add 50g of chopped cilantro to the pan, stir well for about 1 minute, then turn off the heat.
