  • When buying taro, you should choose tubers that are round and even, with a rough skin and still have some dirt and roots attached to the outside.
  • Next, prioritize selecting tubers that have many eyes, dimples, and feel light when held. Usually, these tubers will have a richer and sweeter taste when eaten.
  • Do not choose tubers that have smooth skin and feel heavy when held. These tubers contain a lot of water, and when eaten, they will taste bland and mushy.

  • Prepare the ingredients

  • Prepare the chicken

    Wash the whole chicken directly under running water to clean it and remove the innards, soak the chicken in diluted salt water for about 5 minutes to eliminate any unpleasant odor, then rinse thoroughly with water and let it drain.

    The chicken innards can be used to cook curry along with the chicken or can be omitted if you prefer, depending on your taste.

    • Method 1: Rub the chicken with a mixture of salt and vinegar in a ratio of 2:1 for about 5 minutes, then rinse with clean water a few times.
    • Method 2: You can also replace vinegar with lemon; just rub a few slices of lemon with a bit of salt on the chicken, then rinse with clean water.
    • Method 3: Crush a piece of ginger and mix it with a little white wine, rub this ginger-wine mixture on the chicken and let it sit for about 30 minutes before cooking.

    After thoroughly preparing the chicken, we will marinate the chicken by mixing it with 1 tablespoon of fried garlic, 1 tablespoon of seasoning, and 1 teaspoon of salt, then mix well and let it marinate for 15 minutes.

    Put a large pan on the stove, turn on medium heat, and add 3 tablespoons of curry oil to the pan. Wait for the curry oil to heat up, then add minced shallots, minced lemongrass, and chopped lemongrass to fry until fragrant.

    After that, add all the marinated chicken to stir-fry with the lemongrass and shallots for about 7 – 10 minutes, until the chicken is evenly browned.

    After stir-frying the chicken until browned, add 2 liters of diluted coconut milk to the pan. Turn the heat up high to cook until the curry water boils vigorously, then reduce to medium heat.

    Season the curry chicken with 1/2 tablespoon of salt, 1/2 tablespoon of sugar, and 1 tablespoon of seasoning powder. Continue to simmer on medium heat for an additional 10 minutes until the chicken is tender.

    After seasoning, add carrots and cook for 3 minutes, then add taro. Cook for about 7 more minutes until the carrots start to soften, then add the onions to cook together.

    Before turning off the heat, add all 200ml of thick coconut milk, season again to taste, and then turn off the heat.

    Scoop the curry chicken into a bowl, sprinkle a little chopped scallions on top for aroma, and it’s done.

      Pour 250ml of coconut water into the pot and simmer for about 15 – 20 minutes until the chicken is fully cooked and the sweet potato is tender.
