  • In addition, good pork ears usually have high elasticity. When pressed with your hand, you can feel the firmness; the surface of the ear rebounds, and it feels very sturdy when you pick it up.

How to prepare boiled pig ears

  • Prepare the ingredients

    For the pig ears you bought, use a razor blade to scrape off the hair around the ears and any dirt inside. After that, to remove the odor from the pig ears, rub them with 1/2 a lemon and then rinse with diluted saltwater.

    Put a pot of water on the stove, boil with high heat until the water boils, then add sliced ginger and a bunch of lemongrass. Next, add the pig ears, add 1 teaspoon of monosodium glutamate, and boil over medium heat for about 30 – 40 minutes, then turn off the stove.

    Add to a bowl 1 tablespoon of sugar, 2 tablespoons of fish sauce, 1/2 tablespoon of minced garlic, 1/2 tablespoon of minced chili, 1 tablespoon of lime juice, and 1 – 2 tablespoons of water.
