  • You should choose to buy grouper (black grouper) for hot pot, as this type of grouper has thick flesh and will not fall apart when cooked tender.
  • Fresh grouper usually has a white and black mottled pattern, shiny scales, and clear, slightly bulging eyes.
  • Prioritize selecting ones that feel firm in hand, with intact fins and gills, not slimy or having an unpleasant smell.
  • Avoid buying those with dark skin, scratched or torn scales and fins, as well as those that are slimy and have a strong fishy smell.

How to choose fresh tomatoes

  • It is best to choose ripe tomatoes that are bright red, with a smooth, shiny surface.
  • Freshly harvested tomatoes will usually have a green stem that is tightly attached to the body.
  • Do not choose tomatoes that are bruised, excessively scratched, or have unusual black spots on the surface.

How to choose fresh cilantro

  • You should choose fresh cilantro branches, with intact green leaves and a light fragrant smell when sniffed.
  • Prioritize selecting plants with young roots, not too many veins or dark spots, as they will taste better and be more nutritious.

  • Prepare the grouper

    The grouper you buy should be washed thoroughly with water, scraped clean of scales, then cut off the fins, gills, tail, and remove the internal organs from the fish’s belly.

    To eliminate the fishy smell, soak it in a saltwater mixture for about 10 minutes, then rinse it off thoroughly!

  • Prepare other ingredients

    Wash the tomatoes, remove the stem, and cut them into wedges. Peel the pineapple, remove the eyes, wash it, and cut it into bite-sized pieces.

    For the celery, pick off some leaves, cut off the old stems, wash it, and cut it into 4-5 small sections.

    The herbs such as dill, coriander, and mint should have their roots trimmed, wilted leaves removed, and washed clean.

    Peel the shallots and garlic, wash them, and crush them.

    Place a pot on the stove, add 2 tablespoons of cooking oil, wait for the oil to heat up, then add minced shallots, garlic, tomatoes, and pineapple, stir well for about 2 minutes, then season with 1 tablespoon of pure fish sauce and 1 teaspoon of seasoning powder.

    Sauté for another 3 minutes until the tomatoes and pineapple are soft, then add 1 liter of water to the pot.

    Continue to boil for about 10 minutes until the water in the pot comes to a boil, then add 1 teaspoon of salt, boil for another 5 – 7 minutes and taste again to adjust the flavor.

    Carefully place the grouper into the pot, cook for another 7 – 10 minutes, then turn off the heat. You take the pot to the table, place it on a mini gas stove, and simmer gently.

    Before enjoying, add the herbs like celery, cilantro, dill, and mint into the broth until it boils vigorously, and the vegetables are slightly cooked, then you can enjoy it!
