  • You should choose anchovies with bright eyes, shiny skin, translucent white body, firm and elastic meat, and no fishy smell.
  • The best size for anchovies is about the size of your pinky finger. For milk anchovies, choose those with uniform color and size.
  • Avoid choosing anchovies that are cloudy in color, have cloudy eyes, soft flesh, or a rotten smell.

How to choose fresh tomatoes

  • You should choose tomatoes that are bright red and evenly colored, with taut, plump skin, and those that are ripe with a natural fragrance.
  • Avoid buying tomatoes that are ripe but have no fragrance, as these may have been injected with ripening agents, making them unsafe to consume, or those that are scratched or bruised.

How to choose fresh pineapples

  • Choose pineapples that are bright yellow, sometimes with a bit of green, as these are ripe and delicious.
  • Choose those with large eyes, as these are naturally ripe, and when peeling, you will not lose too much flesh.
  • Avoid buying pineapples that dent in when pressed, as this indicates that the fruit is overripe, making it taste fermented.

  • Prepare and Marinate Anchovies

    For anchovies, after buying them, place the anchovies in a basket with small holes, then remove all debris, sand, and leaf fragments. After that, wash the anchovies 2 – 3 times with clean water.

    Next, let the anchovies drain well, then place them in a bowl, and marinate with 1/2 tablespoon of seasoning powder, 1/2 tablespoon of broth powder, and 1/2 teaspoon of pepper. Mix well and marinate the fish for 10 minutes to absorb the spices.

    Pineapple should be peeled, eyes removed, core discarded, then washed and cut into pieces about 1/3 of a finger thick. Tomatoes should be washed and cut into wedges.

    Green onions and celery should have their roots removed, washed, and cut into sections. Red onions should be peeled and sliced thinly.

  • Cooking the soup

    You put a pot on the stove, add 1 spoon of cooking oil. When the oil is hot, add sliced shallots and sauté until fragrant.

    Next, add the pineapple and stir for about 1 minute, then add 1.5 liters of water, season with 1 tablespoon of sugar, 1/2 teaspoon of MSG, and cook over medium heat.

    When the water boils, add the marinated anchovies and all the marinade that has come from the fish.

    When the water boils again, add the tomatoes and cook for another 3 minutes, taste and adjust the seasoning, then add chopped green onions, chopped celery, and sprinkle a little pepper on top to finish.

    The sour soup with anchovies has a harmonious sweet and sour taste, with tiny, pure white anchovies that are well-seasoned. The soup is fragrant with the smell of green onions and celery, lightly scented with ground pepper, making it very delicious.
