How to choose fresh and delicious pork knuckle
- Choose a firm piece of pork knuckle, with dry-cut meat fibers, and intact hooves to ensure freshness.
- The meat should have a bright pink color, no fishy smell, and should spring back when pressed.
- Additionally, it is advisable to choose the front knuckle as it has thinner, softer, sweeter meat with more tendons, which will make the stew more tender, absorb spices better, and taste better.

How to Cook Pig Trotters Stewed with Wormwood

Prepare the Ingredients
When you buy the pig trotters, use a knife to scrape off any remaining hair (if any), then wash them thoroughly with salted water and cut them into bite-sized pieces.
To eliminate the unpleasant smell of the pig trotters, prepare a pot of boiling water and blanch the trotters for 2 – 3 minutes on high heat, then remove and rinse them again with water.
Remove any wilted or damaged leaves from the wormwood (if any), then wash it thoroughly and let it drain.

Place a pot on the stove, add 500ml of water and simmer the pig trotters for 30 minutes over medium heat.
Tip: During the stewing process, if you see any foam rising, use a spoon to skim it off to make the soup clearer and tastier.
Next, add the wormwood, jujube, and goji berries. Season with 1 tablespoon of seasoning powder, 1/4 teaspoon of salt, 1/4 teaspoon of pepper, 1 teaspoon of sugar, and stir well to absorb the flavors.
