  • Good taro has an elongated shape and symmetrical size. You can press the body of the taro; if it feels hard, it is sticky and delicious.
  • Avoid buying taro tubers that are soft, oversized, misshapen, or damaged, and those that have an unusual smell or are leaking fluid.

  • When selecting shrimp, you should choose those with a transparent shell, with a slight smell of seawater.
  • Fresh shrimp usually have their tails curled together, with a slightly curved, firm body, and the head and body of the shrimp are tightly connected.
  • You should not buy shrimp that are slimy or have inconsistent colors.

    Peel the taro and wash it clean, then shred it.

    Remove the head of the shrimp, peel the shell, devein it, then wash it clean and drain.

    • First, use your hands to break off the head of the shrimp.
    • Next, use your hands to peel the shrimp from the belly first, then around the body. For the shell at the tail, grip the tail firmly and pull it backward.
    • To devein the shrimp, use a knife to make a cut along the back of the shrimp to expose the vein, then use a knife or a sharp bamboo skewer to hook the shrimp vein. At this step, be careful not to break the vein.

    Peel and chop the shallots. Wash and finely chop the cilantro.

  • Sauté the shrimp

    Put a pot on the stove, add 1/2 tablespoon of cooking oil, then add shallots to sauté until fragrant.

    Next, add the shrimp and sauté over medium heat for about 1 – 2 minutes until the shrimp are firm, then add 1 tablespoon of seasoning, 1/2 tablespoon of salt, and 1/2 tablespoon of sugar, and stir well.

  • Cook the soup

    Add the sweet potatoes to the pot with the sautéed shrimp and stir together for about 3 minutes, then pour in about 1 liter of boiling water and cook over medium heat for 10 minutes until the sweet potatoes are smooth.

    After 10 minutes, when the sweet potatoes are smooth, season to taste and turn off the heat.

    Scoop the sweet potato soup into a bowl, add a little coriander on top, and it is ready to enjoy.

    Note: To make the soup more delicious, be sure to skim off the foam while cooking!
