  • Small taro roots are usually sweeter and stickier, round or egg-shaped, with rough skin, many roots, and new roots often have a lot of soil stuck to the skin.
  • Avoid buying taro roots with many black spots, rot, and do not choose long, large roots.

  • Good chicken meat will have a characteristic shiny yellow skin, with a thin outer layer that feels smooth to the touch and has good elasticity.
  • The meat inside has a natural pinkish-red color, not too light or too dark, and does not have any bruises or blood clots.
  • Avoid buying chicken meat that is slightly pale or has turned darker gray, as these are chickens that died before being processed.

How to prepare Chicken and Taro Soup

  • Prepare the ingredients

    Peel the taro and place it in a bowl of diluted saltwater. During the peeling process, the dirt from the skin will stick to the flesh of the tuber, so when washing, remember to use a loofah to gently scrub it clean.

    Then rinse well with water, and cut the taro into bite-sized pieces, about 1 finger length.

    • Method 2: Boil 1 liter of water with 2 teaspoons of salt and add the taro to the pot, cooking on high heat until the water begins to boil, then pour the taro into a colander, rinse with cold water to cool it down, and peel the skin.
    • Method 3: You can wrap the taro in aluminum foil and roast it lightly in the oven or put the taro in a bowl of cold water and heat it in the microwave, then rinse the taro with cold water and peel the skin.

    Chicken fillet should be washed thoroughly with diluted salt water, then rinsed with clean water, drained, and chopped finely.

    Place a pot on the stove, turn on medium heat, add 1/2 tablespoon of cooking oil, and sauté minced shallots until fragrant.

    Next, add the minced chicken and season with 1 teaspoon of seasoning powder. Use chopsticks to stir-fry the chicken until it is cooked and crumbly, not sticking together.

    Add the diced taro, season with 1/2 tablespoon of salt, 1 teaspoon of pepper, and stir-fry for about 3 minutes on the stove.

  • Cook the soup

    Then add about 600ml of water to the pot, bring to a boil over medium heat. Continue to season with one teaspoon of seasoning powder, and 1/2 tablespoon of salt.

    Remove all the foam to make the soup clearer, when the soup boils, cover with a lid and simmer on low heat for about 15 minutes until the taro is soft.

    After that, taste and adjust according to family preferences. Add the chopped coriander and cilantro to the soup and turn off the heat.
