- You should buy crabs that are of moderate size, easy to hold because those are the best quality ones, with plenty of meat and firm, sweet flesh.
- When buying crabs, you should press on the crab’s breast (not the abdomen), if the breast sinks, that crab is no longer fresh; conversely, if it is firm, it is a live crab with fresh meat.
- If the crab’s abdomen is still tight against the breast, it means the crab has not or has just recently spawned, and the meat will be firm and fresh.
- Do not choose crabs that have an unpleasant odor, and if you press on the breast and it feels soft or the claws fall off, that crab is no longer fresh.

Prepare and boil the crab
Fresh crabs bought need to be scrubbed and washed thoroughly, then boiled until cooked and the meat removed.

Prepare the remaining ingredients
Wash the carrot, peel it, and cut half of it into small cubes. Wash the peas and remove the pods. Remove the husk and silk from the corn, then slice thinly (or you can leave the kernels whole).

Boil the crab cooking water, then add diced carrots and peas, cooking for about 10 – 15 minutes before adding thinly sliced corn.
Place a different pan on the stove and sauté thinly sliced shallots for about 3 minutes with 1 tablespoon of cooking oil, then add the crab meat and stir-fry briefly before pouring it into the pot of soup, seasoning with 1 tablespoon of fish sauce, 1 teaspoon of salt, 1/2 teaspoon of seasoning powder, and 1/2 teaspoon of monosodium glutamate.
Beat 1 egg and add it to the soup pot, stirring continuously to create beautiful strands. Dissolve the cornstarch in a little water and add it to achieve the desired thickness, adjusting the seasoning to taste.
