How to choose good ingredients

How to choose good sticky rice

  • Choose sticky rice grains that are large, evenly sized, opaque white, with a shiny exterior and no broken grains.
  • Do not select grains that are dusty, have fuzz, or are yellowish.
  • Additionally, good sticky rice will have a natural, characteristic aroma of rice. On the other hand, sticky rice that has been stored for too long often loses its scent and will not retain its deliciousness when cooked.
  • You can taste the sticky rice with your mouth; if it has a slight sweetness and no strange smell, it is good sticky rice.
  • You can refer to good types of sticky rice such as: yellow flower sticky rice, Tu Le sticky rice, Dien Bien sticky rice, goose sticky rice, and velvet sticky rice.

How to choose good taro

  • It is advisable to choose taro roots that are oval-shaped, with rough skin, still have earth roots, and are of moderate size.
  • Choose lighter taro roots, as they will have more starch inside, resulting in a more fragrant and sticky texture when cooked.
  • A tip for you when selecting processed taro is to look at the flesh; if it has many purple and red streaks, it indicates that the taro is good and rich in flavor.
  • Choose taro with many indentations on the skin, as these are older roots with higher starch content. Avoid choosing roots with smooth skin and fewer indentations.
  • Do not select taro roots with scratches from the harvesting process, as they are more likely to be infiltrated by insects.
  • The heavier the taro root, the more water it contains; if it is cooked, it will have a bland taste and lack richness, so it should not be purchased.

How to make sticky taro dessert

  • Blend pandan leaves and soak sticky rice

    Wash the pandan leaves thoroughly, then take 5 pandan leaves and cut them into pieces, then put them into the blender with 500ml of water.

    Rinse 250g of sticky rice, then place it in a large bowl. Use a sieve to filter the pandan leaf water and then soak it with the sticky rice for 30 minutes.

  • Prepare taro

    Pe the taro, cut into small cubes about 1cm, then soak in diluted salt water for 15 minutes, then take out and rinse clean and let dry.

    Place the taro in a steamer for 20 minutes and then let cool.

    How to peel taro without itching
    • Method 1: Wear plastic gloves when peeling taro to avoid direct contact with the taro.
    • Method 2: Briefly boil the taro in water, then peeling will be easier.
    • Method 3: You can also wrap the taro in aluminum foil and microwave for about 2 minutes, then peeling will be easier and won’t cause itching.

  • Cook the pudding

    Put the soaked sticky rice with pandan leaves into the pot, add 130ml of diluted coconut milk. Cook on low heat until you see the rice has expanded, then add 170gr of sugar, 1 teaspoon of salt, stir well and cook for another 5 minutes.

    Add the cooked sweet potato, cook for another 15 minutes, then you can turn off the heat.

  • Cook the coconut milk

    Add 250gr of the thick coconut milk into a pot, add 3 pandan leaves, 1/2 teaspoon of salt, 2 teaspoons of sugar, and cook until the coconut milk thickens.

    Now just scoop the pudding into a bowl and drizzle the coconut milk on top, and we have a delicious bowl of sweet potato sticky rice pudding with pandan leaves.
