Pig’s liver 500 gr Kumquat 2 pieces Small ginger 1 root Chili 1 piece Lemon 1/2 piece Shallot 1/2 root Garlic 2 cloves Fish sauce 2 tablespoons Common seasoning a little (salt/ monosodium glutamate/ sugar)

How to Choose Fresh and Delicious Pig’s Liver

  • When buying pig’s liver, you should choose pieces that have a bright red color, good elasticity, and when smelled, they should have the characteristic aroma of fresh meat, not a foul smell.
  • In addition, you should prioritize buying liver that has not been cut and still has its lobes intact, with a smooth, flat surface and no lumps.
  • To ensure safety and quality, you should buy pig’s liver at reputable stores or supermarkets that sell liver products with inspection stamps, expiration dates, and production origins!
  • Absolutely do not buy pig’s liver that is cut into small pieces, feels a bit hard or has a loose, mushy texture. Because these are substandard livers, possibly diseased, and not tasty.

How to Prepare Boiled Pig Liver

  • Prepare the Ingredients

    To eliminate the unpleasant smell of the pig liver, use half a lemon to rub with salt, then cut it into bite-sized pieces and rinse with clean water, allowing it to drain.

    Remove the stems from the chili peppers, peel the garlic, and then finely chop them together. After peeling, cut the shallots into wedges.

    Peel the ginger, and lightly crush it with a knife. Take 2 calamondin limes and cut them in half.

  • Boil the Pig Liver

    Place a pot on the stove, add 500ml of water, squeeze the juice from one calamondin lime, and add the crushed shallots and ginger.

    Turn on the heat to medium, add all the prepared liver, and season with 1/3 teaspoon of salt and 1/3 teaspoon of monosodium glutamate.

    Boil the pig liver over medium heat for about 30 minutes until it is tender enough to be pierced with chopsticks and does not bleed, at which point you can turn off the stove.

    First, prepare a bowl of clean water or a bowl of ice water, then use chopsticks to pick up each piece of pig liver just boiled and place it in the bowl to soak for about 2 minutes to cool down the liver and make it firmer.

    Next, take the pig liver out and place it on a cutting board, then cut it into thin slices to your liking and arrange them on a plate to finish.

    Put 2 tablespoons of sugar and 2 tablespoons of fish sauce into the pan, heat and stir well over low heat until the sugar is completely dissolved and the fish sauce boils, then turn off the heat.

    Pour the cooked fish sauce into a bowl, squeeze the juice from 1 remaining calamondin and add all the chopped garlic and chili.
