How to Cook Royal Vegetable Stir-Fried with Pork

  • Preparing Ingredients

    Dry royal vegetable should be soaked in water for at least 2 hours to expand. After that, rinse the vegetable with water to remove any dirt and then squeeze it dry. Cut off the tip of the vegetable strands as this part is not tasty. Next, cut the royal vegetable into pieces about 4 – 5cm long.

    After purchasing the pork, rub it with salt and a few slices of fresh lemon to clean it, then rinse it with water. Slice the pork into thin pieces about 0.5cm thick.

    Crush the garlic and chop it finely. Cut the sweet pepper in half and then into small pieces.

  • Stir-Frying Royal Vegetable with Pork Belly

    Place a pan on the stove, add the pork belly and stir-fry over high heat for 5 – 6 minutes. At this point, the pork will release fat and turn slightly browned at the edges; add the garlic and stir well for fragrance.

    Tip: If you have white wine or cooking wine at home, before adding the garlic, drizzle about 1 capful of wine over the pork. This method will help eliminate the fishy smell of the pork and enhance the flavor of the dish.

    Next, you season the meat with 1.5 tablespoons of soy sauce, 1 tablespoon of oyster sauce, 1/2 teaspoon of salt, and 1 teaspoon of sugar, then continue to stir well for the meat to absorb the spices and turn golden.

    Finally, you add the water spinach and sweet pepper, stir-frying for another 3 – 4 minutes until the vegetables are cooked, adjust the seasoning to taste, then turn off the heat and plate.

King vegetable 80 gr Carrot 100 gr Horn chili 1 piece Bell pepper 200 gr Red onion 3 bulbs Garlic 4 cloves Wood ear mushroom 10 gr (black fungus) Fresh shiitake mushroom 60 gr (or 10gr dried shiitake mushroom) Green onion 4 stalks Cooking oil 2 tablespoons Common seasoning a little (oyster sauce/seasoning powder/msg/seasoning granules/fish sauce/ground pepper)

How to cook stir-fried king vegetable with mixed vegetables

  • Prepare the ingredients

    Soak the dried king vegetable in water for 20 – 25 minutes, then remove it, rinse with water, and let it drain. Cut the vegetable into pieces about 5 – 6 cm long and marinate with 1 teaspoon of seasoning granules.

    Tip: If you want the king vegetable to be crunchier, after soaking it to expand, soak it in ice-cold water for an additional 5 – 10 minutes.

    Soak the wood ear mushrooms in warm water for 20 minutes until they soften, then squeeze them with salt, and rinse thoroughly. Slice the wood ear mushrooms into long strips similar to royal vegetables.

    For the shiitake mushrooms, cut off the stems and soak them in diluted salt water for 2 – 3 minutes, then remove, rinse well, and slice thinly.

    Tip: You can wash the shiitake mushrooms with rice water mixed with a little salt. This method will help clean the mushrooms better and effectively remove the musty smell of shiitake mushrooms.

    Peel the carrots, wash them clean, and then shred or carve them into decorative shapes. For the bell peppers, wash them clean, cut them in half to remove the seeds, and then cut them into long strips or dice them. You should buy bell peppers in multiple colors to make the dish more visually appealing.

    For the chili peppers, slice them diagonally. After peeling, chop the shallots and garlic finely. For the green onions, trim the roots, wash them clean, and cut them into pieces about 2 – 3 cm long.

  • Stir-fried Royal Vegetable

    You place a deep pan on the stove, add about 2 tablespoons of cooking oil into the pan. When the oil is hot, you add onion and garlic to sauté until fragrant. Next, you add carrots and stir-fry on low heat for 1 minute, then increase the heat and add the royal vegetable, stir-frying quickly for 30 seconds.

    You then add the remaining ingredients including shiitake mushrooms, wood ear mushrooms, and bell peppers, remember to stir continuously for even cooking. You season the dish with spices including seasoning powder, oyster sauce, and fish sauce, the quantity depending on each household’s taste.

    When the mushrooms are cooked, you add the chili and green onion, stir well for another 30 seconds, then serve the dish on a plate.
