- Good chicken has thin, smooth skin with a light yellow color; some areas like the breast, wings, and back will have a darker yellow color.
- When buying, press on the part of the meat suspected to be injected with water (thigh, breast,…). If the meat feels mushy, soft, or lacks elasticity, then do not buy it.
How to choose fresh and delicious carrots
- You should choose those with a slender shape, medium size, still have leaf stems, and feel firm when picked up, not too soft. Avoid choosing carrots that are bruised, have cracks, or are missing a piece.
- Choose carrots that have an intact outer skin, smooth, not rough, and without black spots.
- Pick those with an even orange color; avoid those that are too dark, as this may be due to pesticide spraying.
How to choose and store fresh peas
- To choose fresh peas, you need to select those with shiny pods, and when you snap the stem, they should always be crisp. Avoid peas with wrinkled pods as those seeds are not tasty or may be shriveled.
- After buying peas, you should store them whole in a sealed bag in the refrigerator’s cool compartment if not using immediately. When needed, simply take them out, shell them, and prepare. With this storage method, you can keep peas for about 5 – 6 days.

- You should buy oats from reputable establishments and brands with reliable origins.

Prepare the chicken
You rinse the chicken briefly, remove the skin, soak it in diluted salt water for 15 minutes, then rinse it 2 – 3 more times and let it drain. When the chicken is drained, you can put the chicken into a blender to chop it finely or use a knife to mince it evenly.
Tips for preparing chicken without a foul smell:- You can cut off the oil gland at the chicken’s vent to avoid a foul smell when cooking.
- Wash the chicken with vinegar, alcohol, diluted salt water, or lemon to eliminate the odor.

Prepare other ingredients
Peel and finely chop the shallots. Trim the roots of the green onions, wash them clean, and chop them finely. Peel the carrots, wash them clean, and cut them into thin strips.
For peas, if you use frozen ones, just thaw and use them, while if you buy whole peas, you need to separate and wash them clean with water.

Stir-fry chicken
Add 1 tablespoon of olive oil into the pot, when the oil is hot, add the shallots to sauté until fragrant. When the shallots are golden, add the chicken and stir-fry over low heat. To keep the chicken fluffy and evenly cooked, gently push the chicken with a ladle and stir well to avoid burning the meat.
When the chicken is cooked, season it with 1/2 teaspoon of salt, 1 teaspoon of fish sauce. You can adjust the seasoning to make the dish more to your liking.

Cook porridge
Add 1 liter of water to the chicken, cover the pot and cook over high heat. When the water boils, add the oats and stir well with 1/2 teaspoon of seasoning powder. After 5 minutes of cooking, add the carrots and cover, cooking the porridge over medium heat for 15 minutes.
When the porridge is soft, add the peas, cook for another 5 minutes, then turn off the heat.

Final Product
The oatmeal porridge is soft and fragrant, seasoned just right for the little ones. The chicken is tender and aromatic, while the carrots and peas are very sweet. Tips for Successful Preparation
- To avoid making the baby get bored while eating, you should choose rolled oats instead of ground oats.
- When cooking the porridge, you should adjust the amount of water to be just right, not too thick or too thin. Additionally, when cooking rolled oats for the baby, you should also cook them thoroughly to avoid any lumps, making it easier for the baby to eat.
- For rolled oats, the ratio is 1 part oats : 5 parts water.
- For instant oats, also known as crushed oats, the ratio should be 1 part oats : 2 parts water.
