Cooking Beef Stew with Potatoes in a Rice Cooker
Add 1 tablespoon of cooking oil to the pot, wait about 5 minutes for the oil to heat up, then add the remaining chopped garlic and shallots to sauté until fragrant, then add the beef and stir-fry until the meat is lightly cooked and firm.
Add 3 cups of filtered water to the pot so that the water just covers the surface of the beef. Cover the pot and cook for another 10 minutes until it boils. After 10 minutes, skim off any foam if present. Cover the pot and simmer for about 30 minutes until the beef is tender.
After 30 minutes of simmering the beef, open the pot, add the potatoes and carrots, and stew for an additional 15 minutes until the potatoes and carrots are soft. Then adjust the seasoning to suit your family’s taste.
After 15 minutes of stewing the potatoes, turn off the heat and sprinkle the chopped green onions and cilantro on top. Our dish is now complete.
Note: The broth must cover the carrots and potatoes; otherwise, the potatoes will be crunchy. If the water level decreases, you can add more water.

Successful execution tips
- Chewy beef requires quite a lot of time to stew. You can use a pressure cooker to stew faster, but the flavor will be less delicious.
- When buying, look at the grain of the beef. Choose beef with small, tender fibers, and avoid those with large, somewhat tough fibers.
- Select good beef for stews: Cuts with tendons or similar to tendons such as: beef shank, beef tendon, beef thigh, tail, ribs… are relatively chewy but will become very tender and delicious when stewed.
- How to choose good beef: Good beef has a bright red color, fat that is bright yellow, tendons that are white and firm when pressed, not sinking deeply. Press your hand into the meat; if the meat has good elasticity, does not stick to your hand, and has no unpleasant smell, then it is fresh meat.
