How to choose glutinous rice for making bánh tét
- You should choose glutinous rice grains that are large and uniform, opaque white, shiny on the outside, and not broken.
- Good glutinous rice will have a natural, distinctive aroma, and when tasted, it will have a slight sweetness. Additionally, you can choose well-known glutinous rice brands to ensure quality.
- Avoid choosing grains that are moldy, have fuzz, or are yellow in color, as these are low-quality glutinous rice that can affect the flavor of the dish.
How to choose good mung beans
- You should choose peeled mung beans that are bright yellow, feel firm when held, have the fragrance of mung beans, and are not infested with pests.
- For packaged peeled mung beans sold at markets and supermarkets, don’t forget to choose reputable brands, and ensure that the packaging is new and intact to avoid purchasing low-quality products.

How to make 3-color Bánh tét

Prepare the beans and sticky rice
Peel the green beans, rinse them briefly, then soak the beans in water for about 2 – 4 hours.
After soaking, remove the beans and rinse them again with water. Do the same with the sticky rice.

Steam the beans and sticky rice
Place the soaked green beans in a steamer, lined with a layer of foil underneath, and steam in a rice cooker until the green beans are soft.
For the sticky rice, place the soaked rice in a steamer lined with a banana leaf, then place it over the pot and steam on high heat for about 30 minutes.
Tip: Steaming the sticky rice will make it easier for you to wrap the cake! -
Make the pink-purple sticky rice
Add 100ml of dragon fruit juice, 1 teaspoon of red food coloring, and 100ml of coconut milk into the pan. Next, add 50g of sugar and 1 teaspoon of salt, then bring to a boil over low heat.
When the dragon fruit mixture is simmering, add half of the previously steamed sticky rice into the pan and stir over low heat until the dragon fruit juice is evenly absorbed into the rice, making the rice sticky and shiny.
Tip:- You can replace dragon fruit with pandan leaves!
- Adding food coloring will help the sticky rice retain its pink-purple color longer.

Make the green sticky rice
Place a pan on the stove, add 100ml of pandan leaf juice, 100ml of coconut milk, 50g of sugar, and 1 teaspoon of salt, then bring to a boil over low heat.
Next, add the remaining half of the steamed sticky rice into the pan and stir until the rice is evenly colored and has the right stickiness.

Make mung bean filling
Add 150ml of coconut milk, the entire amount of steamed mung beans into the pan and sauté on low heat for about 5 minutes.
Next, season with 40g of sugar and 1 teaspoon of salt into the pan and continue stirring until the mung beans become sticky, then turn off the heat.

Wrap the Banh Tet
Prepare 3 layers of banana leaves, with the outer leaves placed vertically and the inner leaves placed horizontally. Next, place the entire amount of pandan leaf sticky rice on top and spread it evenly.
Then, add the pink-purple sticky rice on top and also spread it evenly. Do the same with the mung bean filling that was cooked earlier.
Finally, roll the Banh Tet into a cylindrical shape and secure it with string to complete.

Steaming the cake
Put the wrapped banh tet into a steamer and steam for about 60 minutes over medium heat until the banana leaves change color.
