1 Soak the scallions in diluted salt water and a little alum
Scallion bought should be washed clean and then soaked in water mixed with a little salt and alum overnight. This process helps the scallions look whiter and crisper when pickled. Additionally, it helps the scallions become softer and easier to peel off the thin outer layer during preparation, saving you a lot of time in processing.
2 Peel and wash the scallions
After soaking the scallions for enough time, take them out to drain. Then, cut off the roots and peel off the thin outer layer. Note that while cutting, do not touch the flesh of the scallions to prevent them from becoming soft when pickling. Finally, wash the scallions clean several times with water.
Avoid the case where after soaking the scallions, you wash them very clean, dry them, and then start to process and peel. This method will make it difficult to peel the scallions, causing you to spend more time on processing!
3 Sun drying
After peeling and washing the scallions clean, take them out to sun dry for about 4 – 5 hours to completely drain the water.
