Sticky rice 1 kg Soybean flour 100 gr Pork shoulder 200 gr Fish sauce 1/2 tablespoon Cooking oil 150 ml Common spices A little (salt/ monosodium glutamate/ ground pepper)

How to choose fresh and delicious pork

  • Good pork is dry, not slimy, and has normal smell and color. The meat should have high elasticity and firmness. When pressed, the pork should dent and return to its original state when the finger is withdrawn.
  • Choose pieces of meat that have both fat and lean, avoid choosing pork that has a layer of meat close to the skin and has a dark red color. This piece of meat may have been injected with growth stimulants, which can affect health when consumed.
  • Avoid buying pork with yellow fat as this is a sign of sick pigs. Additionally, if the pork releases a lot of liquid when cut, has pale color, and the muscles are flabby, this indicates that the pig has been pumped with water.

  • Making the Cake Batter

    Choose good quality sticky rice, large round grains, remove any damaged or broken grains, then wash thoroughly and soak in water for 4 – 8 hours or overnight. After soaking, the rice will swell and soften; then you grind it into a wet batter.

    Next, pour the wet batter into a filter bag to remove some of the water from the batter, preventing it from becoming too diluted.

    After that, pour the drained batter into a bowl or a large mixing bowl, then add 1 teaspoon of salt, 1 teaspoon of seasoning powder, soy flour, and mix well. If the batter is too thick while mixing, add more water.

  • Making the filling

    Lean pork shoulder should be washed clean and drained. Then cut into small pieces like peanuts and marinate with a little fish sauce, monosodium glutamate, and pepper.

    You can add a little chopped green onion if you like; it will make the meat more fragrant and flavorful.

    Put a pan on the stove and add plenty of oil to deep fry the cake, then turn on the heat to warm the oil before frying.

    Use a cake mold to make the cake by placing the dough into the mold, adding the meat in the middle to make the filling.

    Then, place the cake into the pan of oil and fry over medium heat until the cake is cooked and golden brown. When the cake is golden and crispy, take it out and place it on a tray to drain excess oil.
