Mix the Dough
Beat 1 chicken egg, only use 40ml, the remaining part is for brushing the bread’s surface.
Add 110ml of fresh milk, 40ml of chicken egg, 3gr of yeast, and 30gr of sugar into a glass and stir well.
Put 200gr of flour, 1/4 teaspoon of salt, and the milk mixture into a bowl and mix until the dough is sticky.
Note: The mixing process should take about 50 times. -
Mix the dough
Melt 30g of butter and let it cool, then add it to the flour and mix well for 3 – 4 minutes.
Cover the dough tightly with plastic wrap and let it rest for 10 minutes.
After 10 minutes, continue to mix the dough for another 1 – 2 minutes.
How to recognize the dough is satisfactory:
- The dough is smooth and elastic.
- The dough is not sticky: When pressed, it feels slightly sticky, but when you lift your finger, the dough does not stick to your hand.
- You can stretch the dough into a thin film without tearing.
- Check the dough using the Windowpane test. Pinch a piece of dough and stretch it out. If it forms a thin film that is not easily torn and light can pass through, it is satisfactory.

Proof the dough
Cover the dough and proof until it doubles in size, about 40 minutes to 1 hour.

Apple Bread Roll
Dust the dough block with 30g of dry flour and then use your hands to spread it evenly into a round shape.
Tip: You can use additional dry flour, but only about 20g; do not add too much as it will make the dough dry.Roll the dough thinly into a rectangle measuring 20x30cm.
Melt 30g of butter and spread it on the surface of the dough, then sprinkle with a mixture of brown sugar and cinnamon.
Next, evenly distribute the apples over the dough, roll it up, and cut it into 6 equal pieces.
Line a baking tray with parchment paper and place the rolls in it, letting them rise until doubled in size, about 40 minutes to 2 hours.

Preheat the oven to 160 degrees Celsius for 15 minutes.
Beat the remaining egg from step 1 with 10ml of fresh milk, brush it over the surface of the dough, and bake at 160 degrees Celsius for 30 minutes until the top is golden.
