Apple 100 gr (chopped) All-purpose flour no. 13 230 gr Instant yeast 3 gr Chicken egg 1 piece Fresh milk 120 ml Sugar 30 gr Butter 60 gr Brown sugar 40 gr Cinnamon powder 1/2 teaspoon Salt 1/4 teaspoon

How to Make No-Knead Cinnamon Apple Bread

  • Mix the Dough

    Beat 1 chicken egg, only use 40ml, the remaining part is for brushing the bread’s surface.

    Add 110ml of fresh milk, 40ml of chicken egg, 3gr of yeast, and 30gr of sugar into a glass and stir well.

    Put 200gr of flour, 1/4 teaspoon of salt, and the milk mixture into a bowl and mix until the dough is sticky.

    Note: The mixing process should take about 50 times.

  • Mix the dough

    Melt 30g of butter and let it cool, then add it to the flour and mix well for 3 – 4 minutes.

    Cover the dough tightly with plastic wrap and let it rest for 10 minutes.

    After 10 minutes, continue to mix the dough for another 1 – 2 minutes.

    How to recognize the dough is satisfactory:

    • The dough is smooth and elastic.
    • The dough is not sticky: When pressed, it feels slightly sticky, but when you lift your finger, the dough does not stick to your hand.
    • You can stretch the dough into a thin film without tearing.
    • Check the dough using the Windowpane test. Pinch a piece of dough and stretch it out. If it forms a thin film that is not easily torn and light can pass through, it is satisfactory.

  • Proof the dough

    Cover the dough and proof until it doubles in size, about 40 minutes to 1 hour.

    Dust the dough block with 30g of dry flour and then use your hands to spread it evenly into a round shape.

    Tip: You can use additional dry flour, but only about 20g; do not add too much as it will make the dough dry.

    Roll the dough thinly into a rectangle measuring 20x30cm.

    Melt 30g of butter and spread it on the surface of the dough, then sprinkle with a mixture of brown sugar and cinnamon.

    Next, evenly distribute the apples over the dough, roll it up, and cut it into 6 equal pieces.

    Line a baking tray with parchment paper and place the rolls in it, letting them rise until doubled in size, about 40 minutes to 2 hours.

  • Baking the Bread

    Preheat the oven to 160 degrees Celsius for 15 minutes.

    Beat the remaining egg from step 1 with 10ml of fresh milk, brush it over the surface of the dough, and bake at 160 degrees Celsius for 30 minutes until the top is golden.

    When the bread is done, brush a layer of butter on top to make it fragrant, soft, and shiny.

    The cinnamon apple bread is aromatic, chewy, soft, and sweet with a rich filling of sweet and mild apples, combined with the distinctive warm flavor of cinnamon. All these elements create an incredibly delicious and appealing bread.

Tips for successful execution

  • If you are not using instant dry yeast, you must activate the yeast with warm water or milk at 32 – 38 degrees Celsius, stir well and let it sit for 5 – 10 minutes until the yeast blooms into a crab brick-like mass. It should not be hotter because it will kill the yeast or weaken the yeast’s activity)
  • If using instant yeast, it is advisable to use golden instant yeast for rich and sweet bread types.
  • You should knead correctly to form gluten bonds in the dough; when baked, the bread will have a chewy and soft texture.

How to store bread

Place the bread in a box or sealed bag, store at room temperature and use gradually within 2 – 3 days.
