Required tools
Whisk, mixing spoon, oven, non-stick pan, parchment paper, round mold 15 – 20cm
How to Make Apple Pie
-
Line with parchment paper
Place the mold on parchment paper, use a pen to trace around the bottom edge and cut out a circle using the mold to line the base. You can also buy pre-made round parchment paper that corresponds to the size of the mold. Cut an additional rectangular piece that is taller than the mold and arrange it in the mold.
-
Prepare the apples
Peel the apples. Then, cut one apple into cubes and cut another into 6 wedges. Each wedge should be sliced into 4 pieces.
Tip: Depending on your taste preference for sour or sweet, you can choose the apples accordingly. Ripe red apples will provide sweetness, while green apples or unripe red apples will provide a tart flavor.
-
Prepare the apple pie filling
Place a pan on the stove, add butter and let it melt, then add the sugar. Cook the sugar until it turns a caramel color, then add the diced apples and stir-fry over medium heat. Once the apples are well coated with the butter and caramel sugar, reduce the heat to low and cover for 5 minutes.
-
Prepare the cake batter mixture
Add the remaining butter and sugar into a large bowl. Use a whisk to mix the butter and sugar until well combined, forming a smooth mixture.
Gradually add 2 eggs into the mixture above and continue to stir well. After the butter + sugar + egg mixture is well combined, add the flour + baking powder + cinnamon powder. Mix everything until the mixture is thick and smooth.
Tip:
- The butter should be at room temperature, soft but not melted. You can use a egg beater to save time, and the mixture will be more even and smoother.
- You can beat the eggs separately before adding them to the butter + sugar mixture. Avoid using spoiled eggs as they will affect the mixture. Flour, cinnamon powder, and baking powder should be sifted finely before adding to the bowl.
-
Preparing to bake the pie
Use a whisk to mix the apples in the pan gently, being careful not to be too rough. Pour the mixture into a mold lined with parchment paper and arrange 6 slices of apple on top for decoration according to your taste and preference. Place the pie in the oven and bake at a temperature of 180°C for about 40 – 50 minutes.
Tip: Depending on the type of oven, there may be differences in temperature, so you should follow the time and temperature chart for baking. However, during the baking process, always keep an eye on it to adjust the time and temperature appropriately for the best possible pie when it comes out of the oven.
-
Finished product
The pie after baking will have a golden brown crust, and the apples will turn dark and shriveled. Inside, the pie is soft and moist, with the apple pieces fragrant and rich in caramel and butter flavor.

Cake flour 160 gr (cake flour) Bread flour 155 gr Almond flour 15 gr Sweet potatoes 2 pieces Apples 2 pieces Vanilla 1/2 pod (or 2gr vanilla extract) Peanut butter 220 gr Cane sugar 40 gr Condensed milk 30 ml Rum 1/3 teaspoon Salt 2 gr
How to choose good sweet potatoes
- Choose sweet potatoes that are intact, not cracked or chipped. When you hold them, they should feel heavy, firm, and not bruised.
- Be careful if you see sweet potatoes with black spots or pockmarks, that is a sign they have gone bad.
- Select sweet potatoes that are round or elongated without any bulges or indentations, and when pressed gently, they shouldn’t be too hard; these varieties are usually less fibrous, starchy, and very sweet.
- Avoid choosing very small, long, bulging, or indented sweet potatoes as they tend to be more fibrous.

How to make Sweet Potato Apple Pie
-
Mix flour and butter
Mix 160g of cake flour and 155g of bread flour together.
Then cut 200g of butter into small pieces and add it to the dry flour mixture, mixing and mashing the butter as you go.
Dissolve 160ml of cold water with 2g of salt and then gradually pour it into the cake flour mixture. Mix well until it forms a uniform dough.
-
Roll and rest the dough for the first time
Wrap the mixed dough in plastic wrap, forming it into a rectangle, and then place it in the refrigerator for about 1 hour.
Sprinkle a little flour on the cutting board, take the dough out of the wrap, sprinkle a bit more flour on top of the dough, and use a rolling pin to roll the dough out into a rectangle.
Next, fold both ends in, and then roll it out again.
Finally, fold both ends again and wrap it in plastic wrap, then place it in the refrigerator for about 1 hour.
-
Prepare sweet potatoes
Wash the sweet potatoes with diluted salt water, then drain.
Next, cut the sweet potatoes into thick slices about 1 – 2cm. Then use a knife to peel off the skin.
Place a pot on the stove, put the sweet potatoes in the pot, and pour enough water to cover the sweet potatoes. Heat over medium heat, boil the sweet potatoes for about 15 – 20 minutes until they are soft, then turn off the heat, drain the water, and take the sweet potatoes out into a bowl.
-
Mash the potatoes
After boiling the sweet potatoes, use a masher or a fork to mash the sweet potatoes finely.
Add 40g of sugar, 30ml of condensed milk, and 1/2 vanilla bean to the sweet potatoes, and use a flat whisk to mix well.
Then add about 15g of almond flour, 1/3 teaspoon of rum, and continue to use the flat whisk to mash and mix the mixture until it is well combined. Use cling film to wrap the mashed sweet potatoes to proof.
Tip: You can replace the vanilla bean with vanilla extract.
-
Roll and proof the dough for the second time
Similar to the first time, take the dough out of the refrigerator and remove the wrap.
Dust a layer of flour on the cutting board so that the dough does not stick while rolling it out, place the dough on the board, and use a rolling pin to roll it thin, then fold both ends of the dough inwards.
Continue to roll the dough thin and then fold the dough again. Wrap it in plastic wrap and return it to the refrigerator for about 1 hour.
-
Prepare the apples
Wash the apples thoroughly and let them dry.
Cut the apples into wedges, then remove the seeds and the skin.
Place the apples in a bowl and mix well with 15ml of lemon juice.
-
Sautéing apples with caramel
Place a pot on the stove, add 10ml of water and 40gr of sugar, stirring constantly over low heat until the sugar dissolves.
Then heat until the sugar boils, large bubbles appear, and the sugar begins to turn a brown color, then add 20gr of butter, melting it.
Next, add the apples to the pot, stir well. Add 1/2 vanilla bean, then continue to sauté for about 10 minutes to allow the apples to absorb the caramel. When the apples start to soften, turn off the heat and transfer the apples to a serving plate.
-
Rolling and arranging the pie crust
Divide the dough into 2 parts.
For the first part, sprinkle some flour on it and then use a rolling pin to roll the dough out thin. Gradually place the dough into the pie mold, press lightly to make it stick to the mold, and trim off the excess edges. Wrap it in plastic wrap and put it in the freezer to set the dough.
For the remaining dough, roll it out thin as well. Use a specialized knife to cut the dough into strips about 1 – 2cm apart.
Finally, place the dough in the freezer to firm up the strips.
-
Shaping and baking the pie
Pour the sweet potato mixture into the pie mold, spreading it evenly. Then layer the caramel apple slices on top.
Next, arrange the cut strips of dough in a checkerboard pattern, trimming off any excess dough.
For the pie edges, use 2 strips of dough braided together and place them around the circular edge of the pie mold.
Preheat the oven to 200 degrees Celsius for 20 minutes to stabilize the oven temperature.
Then place the pie in the oven, baking at 180 degrees Celsius for 35 – 40 minutes until the pie is cooked and golden brown.
-
Final product
The pie is fragrant with caramel, the crust is evenly golden and crispy. Inside, the sweet and crunchy apple filling combines with the rich sweet potato to create a flavor that is both unique and appealing. You can serve the pie with hot tea to balance the taste.
