How to choose fresh, delicious, quality pork belly

  • Choose meat that is light red or bright pink; when cutting the meat, you should see a pinkish-white color, a slight sheen, and the fat layer in between should be bright white.
  • Good, clean pork belly usually has the meat and fat tightly attached to each other, not too loose when held in hand. The outer skin and fat layer should be about 1.5 – 2cm thick.
  • Avoid buying meat that has a fishy smell or is spoiled, as it may have been stored for too long or injected with chemicals, which will not be safe to eat.

  • Prepare the pork belly

    To remove the odor and clean the pork belly, soak it in diluted salt water for about 15 minutes. Then rinse it thoroughly and let it drain.

    How to eliminate the odor of pork belly

    • Method 1: To effectively remove the odor from pork belly, boil a pot of water and briefly blanch the meat for about 2 minutes, then take it out and rinse it under cold water.
    • Method 2: You can also massage the meat with vinegar for about 2 – 3 minutes and then rinse it under running water until clean.
    • Method 3: Soak the meat in diluted white wine for about 5 – 10 minutes, then take it out and rinse it 2 – 3 times with water.

    Wash the red chili pepper and slice it. Cut the lime in half and squeeze out the juice.

    Trim the roots off the lemongrass, wash it, and slice it thinly. Wash the calamondin and slice it thinly.

    Wash the kaffir lime leaves and coriander, then chop them finely.
