How to Make Potato Cheese Stuffed Bagel Rolls

  • Mix the dough

    Add 200g of bread flour, 4g of dry yeast, 3g of salt, and 7g of sugar into a bowl, then mix well.

    Next, add 120g of warm water (35 degrees Celsius) into the bowl and mix well.

    Tip: You should mix the bread flour with sugar and salt first, then add the yeast later. Avoid direct contact of the yeast with the salt.

  • Knead the bread dough

    Use your hands to lightly knead the dough, then fold the dough in half, using the palm of your hand to press it outwards. Next, rotate the dough by 90 degrees and repeat the previous 2 steps for 10 minutes.

    Once the dough has formed a ball, add 4g of unsalted butter and continue kneading for about 5 minutes until the dough is smooth and elastic.

  • Boil the bagels

    Place a pot on the stove, add 1 liter of water, 1 teaspoon of honey, 1 teaspoon of baking soda.

    Preheat the oven for 10 minutes at 180 degrees Celsius.

  • It is recommended to use dry yeast, which will help the bread be sweeter and more delicious.
  • When mixing flour with yeast, avoid using water that is too hot, 38 – 60 degrees Celsius, as it will cause the yeast to react slowly or die. The ideal temperature is between 20 – 37 degrees Celsius.
  • To test if the dough has risen adequately, press your hand into the dough. If the dough retains the indentation, it is ready; if the indentation returns to its original shape, it needs more rising time.
  • Avoid over-proofing as it will cause the dough to have a strong yeast smell.
  • It is advisable to preheat the oven before baking to stabilize the oven temperature, ensuring even baking.
