Tapioca flour 205 gr Chicken eggs 4 pieces Condensed milk 40 gr Baking powder 0.05 gr Yeast 0.05 gr Coconut milk 200 ml Vanilla 1 tube Sugar 100 gr Salt 1/4 teaspoon Cooking oil a little

How to Make Baked Coconut Cake Using an Air Fryer

  • Cook the Sugar

    Place a pot on the stove, add 100g of sugar, 150ml of coconut milk, and 1/4 teaspoon of salt. Then, gently stir this mixture over medium-low heat until the sugar dissolves, then turn off the heat.

  • Mixing the flour mixture

    Next, sift 200g of tapioca flour and rice flour into a bowl. Then, add 0.05g of yeast, 0.05g of baking powder, and 1 tube of vanilla, then mix well.

    In another bowl, crack 4 eggs and beat them gently to avoid creating bubbles.

    When the syrup mixture cools down, slowly pour it into the sifted flour mixture along with the beaten eggs, then stir the flour mixture well and let it rest for about 60 minutes.

  • Baking the cake using an air fryer

    Line a baking pan with aluminum foil and brush it with cooking oil. Next, place this pan in the air fryer and preheat at 200 degrees for 10 minutes.

    Then, pour the cake batter into the pan and bake for the first time at 165 degrees Celsius for 20 minutes, and the second time at 150 degrees Celsius for 10 minutes.

  • Make the dipping sauce

    Put 50ml of coconut milk and 40g of condensed milk into a small pot, then stir evenly over low heat until the mixture is warm.

    Next, dilute 5g of tapioca flour (about 1 teaspoon) with a little water. Then, slowly pour this flour mixture into the pot of coconut milk, stirring continuously until the mixture thickens, then turn off the heat.

    Finally, pour this dipping sauce into a bowl, let it cool, and enjoy it with the steamed rice cake.

    The steamed rice cake cooked in the air fryer emits a fragrant vanilla aroma. The cake’s texture is soft, chewy, with a sweet and creamy flavor that is very appealing; enjoying it with the dipping sauce enhances the flavor and makes it even more delicious.
