Ingredients for Baked Green Tea Cheesecake Serves 4 – 5 people

Japanese green tea powder 10 gr (matcha) Whipping cream 150 gr Cream cheese 350 gr All-purpose flour 15 gr Chicken eggs 3 eggs Sugar 90 gr

What is matcha powder? Distinguishing matcha powder from green tea powder

  • Matcha powder is a fine powder made from 100% young buds of the green tea plant and is produced through a special process.
  • Matcha powder is finer, softer, and lighter compared to green tea powder which has slightly larger, coarser granules and seems heavier.
  • Matcha powder initially has a bitter taste but then has a sweet, fragrant, refreshing flavor. In contrast, green tea powder dissolves but still has a gritty texture, a bitter taste, and lacks a sweet aftertaste when consumed.
  • Matcha powder has a fresh, mild aroma, even having a slightly fishy smell like seaweed. Green tea powder, on the other hand, does not smell as fragrant as matcha.

Where to buy cream cheese and whipping cream?

  • You can easily find cream cheese and whipping cream at reputable baking ingredient stores or supermarkets.
  • When purchasing, pay attention to the expiration date, ensure the packaging is intact, and must be kept refrigerated to ensure quality.

How to make baked green tea cheesecake

  • Mix the cream cheese mixture

    Put 350g of cream cheese into a bowl and use an egg beater to blend until smooth. Then, add 90g of sugar and continue using the egg beater until the cream cheese mixture is smooth without lumps.

    Next, use 3 eggs. Add each egg into the cream cheese mixture one at a time and use the egg beater to mix well until all 3 eggs are incorporated to create a thick, smooth mixture.

    Tip: To make the cream cheese mixture smoother and easier to beat, let the cream cheese soften at room temperature or put it in the microwave and heat for 30 seconds.

  • Mix the green tea cream mixture

    In a new bowl, sift 10g of Japanese green tea powder (matcha) into the bowl and divide 150g of whipping cream into 3 portions and add them to the bowl in batches.

    As you add, stir well to ensure the green tea cream mixture is well blended and smooth.

  • Mix the green tea mixture with the cheese cream

    Add the green tea cream mixture you just made into the cheese cream mixture and stir well.

    Next, sift an additional 15g of all-purpose flour into the green tea cheese cream mixture and use a whisk to mix thoroughly until fully combined.

  • Pour into the mold and bake

    You sift the green tea cream cheese mixture through a sieve to ensure the batter is smooth and free of air bubbles.

    You line the round cake mold with non-stick parchment paper and press the folds to ensure the paper adheres evenly to the sides of the mold. Gently pour the cake batter into the mold, tapping it lightly to level the batter.

    Preheat the oven at 170 degrees Celsius for 15 minutes to stabilize the temperature.

    Then, you bake the cake at 220 degrees Celsius for 30 minutes.

    After baking, let the cake cool completely and place it in the refrigerator for 4 – 5 hours before you can enjoy it!

    Tip: If the cake crust after baking has not reached your desired dark brown color, you can bake it for an additional 5 – 10 minutes at 230 degrees Celsius!

    The final product is a delightful baked green tea cheesecake that is both cool and fragrant.

    After baking, the cake will have a beautifully charred dark brown color mixed with a light green hue, along with a soft, wonderful, and fluffy texture.
