How to make Baked Donut

  • Mix the wet ingredients

    Add 200ml of unsweetened fresh milk, 170gr of melted unsalted butter, 80ml of honey, 1 teaspoon of vanilla extract, and 4 eggs into a bowl.

    Use a fork or whisk to mix thoroughly until the mixture is well combined.

  • Mix the flour and proof the dough

    In a new bowl, add 531gr of all-purpose flour, 1 teaspoon of salt, and mix well. Then, add 2 teaspoons of instant yeast and continue to mix well.

    Note: To ensure the yeast does not die or work weakly, you should mix the yeast and salt separately!

    Next, pour the egg and milk mixture into the flour bowl, using a spatula to mix thoroughly so that the dough sticks together into a ball.

    Then, tightly cover the bowl with plastic wrap and let the dough proof for 2 – 3 hours at room temperature.

    After 3 hours, place this bowl of dough in the refrigerator and let it proof overnight (about 12 hours).

  • Roll out the dough and shape it

    Place the dough on the table, sprinkle a layer of dry flour on top, then use a rolling pin to roll it out to a thickness of about 1/2 of a small finger.

    Next, use a round cutter to cut the dough. After that, use a smaller round cutter to press in the center of the cut dough to shape it.

    Prepare a baking tray lined with parchment paper, place the donuts on top, cover with a cloth, and let rise for 20 – 30 minutes.

  • Bake the donuts

    Preheat the oven to 190 degrees Celsius for 15 minutes.

    Brush a layer of unsalted butter on the surface of the donuts, then place them in the oven and bake for 15 minutes at 190 degrees Celsius until the surface turns golden brown.

  • Making the glaze

    Put 187g of powdered sugar, 1.5 teaspoons of vanilla extract, and 2 tablespoons of unsweetened milk into a bowl. Stir well until you get a smooth, thick mixture.

    In the second bowl, add 187g of powdered sugar, 2 tablespoons of unsweetened milk, 1.5 teaspoons of vanilla extract, a little pink food coloring, and stir well.

    In the third bowl, add 187g of powdered sugar, 4 tablespoons of dark cocoa powder, 3 tablespoons of unsweetened milk, 1 teaspoon of vanilla extract and stir well.

    When the cake comes out of the oven, quickly dip it into the sauce bowl and place the cake on a rack to dry!

    Tip: To make the cake more eye-catching and appealing, you can sprinkle a little candy or colored rice on top!

How to Make Baked Donut with Jam Filling

  • Mixing the Dough

    In a bowl, add 150gr of all-purpose flour, 7gr of instant yeast, 50gr of sugar, and 1/4 teaspoon of salt in order. Then, use a whisk to mix well until the ingredients are combined.

    Next, add 150ml of warm unsweetened milk (40 degrees Celsius), 4 tablespoons of melted unsalted butter, 2 egg yolks, and 1/2 teaspoon of vanilla extract into the flour mixture. Continue to stir until the mixture is smooth.

    Then, cover the bowl tightly with plastic wrap and let it rest for 10 minutes.

    Tip: To prevent the yeast from dying or becoming weak, the milk added to the yeast should only be warm at about 32 – 40 degrees Celsius.

  • Knead the dough and let it rise for the first time

    After 10 minutes, add 225g of flour to a bowl and mix well.

    Next, use your hands to knead the dough until it forms a smooth, elastic ball that does not stick to your hands.

    Then, cover the bowl tightly with plastic wrap and let it rise for 45 minutes until the dough doubles in size.

  • Shape the donuts and let them rise for the second time

    Sprinkle a layer of dry flour on the table and the risen dough, then use a rolling pin to roll it out to about 1/3 of the thickness of a small finger. Next, use a round cutter to cut the dough.

    Place the donuts on a tray lined with parchment paper, cover them with a cloth, and let them rise for the second time at room temperature for 45 minutes.

  • Baking and Filling

    Preheat the oven to 185 degrees Celsius for 15 minutes.

    After 15 minutes, place the donuts in the oven and bake for about 15 – 20 minutes until the tops turn golden brown.

    Prepare 1 bowl containing 67g of sugar, and 1 bowl containing 2 tablespoons of melted unsalted butter. When the donuts are freshly baked, use a brush to coat them with a layer of butter, then roll them in a layer of sugar and place them on a rack to cool.

    Finally, place the strawberry jam into a piping bag. Use a knife to make a small hole on the side of the donut and fill it with the jam.
