- Choose large, evenly sized clams as they will have more and firmer meat
- The outer shell should not be chipped and should have a sandy yellow color
- No foul or strange smell
- Preferably buy from reputable seafood sellers.
How to prepare Garlic Roasted Razor Clams

Prepare the razor clams
First, you wash the clams thoroughly to remove any sand and dirt left on the shell, then rinse and quickly soak them in saltwater. To ensure safety and good taste, you can soak the razor clams in rice water and add a few sliced chili peppers so that the clams release some impurities, for about 1 hour.
You take the clams out, wash them with clean water again, and let them drain.
Tip for cleaning clams, no fishy smell:
- Many people are more careful; after soaking the clams in rice water or saltwater with sliced chili, they proceed to clean each clam. Use pointed scissors to cut between the body of the clam, exposing the dirt inside, and rinse again with clean water to drain.
- Garlic roasted razor clams should be kept in their shells, do not remove the meat!

Prepare other ingredients
For the Vietnamese coriander, wash it clean and break it into small edible pieces. The lemongrass should also be washed and then minced finely.

Fried garlic
Place a pan on the stove, wait for the oil to heat up, then add 1/2 of the minced garlic to fry until fragrant, then remove it to a bowl.

Making garlic fried clams
You continue to use that hot pan, add a little cooking oil and start to fry the remaining 1/2 minced garlic along with minced lemongrass and chili until the mixture has an appealing color over medium heat.
After that, quickly add the razor clams and stir-fry over high heat with 20ml of annatto oil until the clam meat is slightly firm. At this point, season to taste with 3 tablespoons of fish sauce, 1/2 teaspoon of salt, 2 tablespoons of sugar, 1/2 tablespoon of seasoning powder, and 1/2 teaspoon of pepper, stir well for a bit and turn off the heat.
Finally, place the stir-fried razor clams on a plate, sprinkle the fried garlic (set aside) on top and decorate with rice paddy herbs and carved chili for a beautiful presentation.
