  • Choose a bunch of bananas that are not uniformly colored (some ripe, some green) and have dark or deep pink spots.

  • Whisk the egg yolks

    First, separate the egg yolks and egg whites into 2 different bowls.

    In the bowl with the egg yolks, add the mashed bananas, 100ml of unsweetened fresh milk, 1 vanilla stick, and 30ml of cooking oil, then mix well.

    Next, add 110g of flour and 6g of baking powder, and continue to mix until the mixture is smooth.

  • Beat the egg whites

    In a bowl of egg whites, add a little salt and use a mixer on low speed until the eggs form a lot of tiny bubbles like soap.

    Next, add the juice of 1/4 lemon, gradually add sugar, and then beat at medium speed until the eggs are soft and fluffy, lifting the whisk to create a peak that bends slightly.

    • Egg whites should be at room temperature before whipping.
    • Use fresh eggs, and ensure that no other substances like yolks or fats are mixed in, otherwise the egg whites won’t whip properly.
    • Egg whites will whip faster if you can add vinegar or lemon juice, but be careful with the amount, otherwise, the cake will change flavor. For safety, you should use cream of tartar at a dosage of 1/2 teaspoon.

    Divide the whipped egg whites into 2 portions, add each portion to the bowl of flour, and gently mix in one direction to avoid breaking the bubbles.
