How to choose good shrimp
For this noodle soup dish, you should choose tiger shrimp, live shrimp, or frozen shrimp.
If buying live shrimp:
- When choosing, look for shrimp that are still jumping, have a pink-white color, and check if the shell is tightly attached to the shrimp meat; if it is, then the shrimp is fresh.
- Pull the shrimp’s tail straight and bring it to the light, observe the joints on the shrimp’s shell and meat; if the joints are narrow, it is fresh shrimp; if the shrimp’s joints are wide, it is shrimp that has died and been frozen.
- Another way to distinguish fresh shrimp is to observe if the shrimp’s body bends into a curve and has a slimy texture; use your finger to gently press on the shell and run it along the shrimp’s body; if your finger gets slimy, the shrimp has been stored for too long, and you should not buy it!
If buying frozen shrimp:
- Choose shrimp that have all parts intact, with no fishy or foul smell; when you touch them, they should feel firm and elastic.
- When buying shrimp, you need to observe whether the seller has iced the shrimp with a lot or a little ice; if there is little ice but the shrimp are still fresh and soft, then they have been iced with urea.

How to make Shrimp and Pork Cake with Coconut Milk

Prepare the ingredients
- Minced pork placed in a bowl, marinated with salt and pepper. Clean the shrimp, peel and finely chop.
- Chop the green onions, cilantro, and Vietnamese coriander, then rinse them. Cut the green onions into pieces. Finely chop the Vietnamese coriander. Peel and slice the shallots.
- Put grated coconut in a large bowl or pot. Add 1 bowl of warm water, strain to get the coconut milk, and set aside. Continue adding 2 liters of water to the grated coconut, strain again to get the water for cooking the cake.

Sauté the meat and shrimp
Heat the cooking oil, add the shallots and fry until fragrant, then remove to a small bowl. Continue using the same pan, add the green onions and sauté briefly. Then add the pork, stirring well.
When the pork is nearly cooked, add the shrimp, and continue to sauté until both the shrimp and pork are cooked, then turn off the heat.

Cooking the broth
Add the strained coconut milk (filtered twice) and the sautéed shrimp and pork into the pot, and bring to a boil. When the water starts boiling, add sugar, seasoning powder, 1/2 teaspoon of salt, and monosodium glutamate.

Completion
Add the rice cake into the pot and cook for about 2 minutes until the rice cake is done. Finally, add the reserved coconut milk, and when it starts to bubble, turn off the heat.
Scoop the rice cake into a bowl. Sprinkle with chopped green onions, coriander, and Vietnamese mint. If you like it spicy, you can add chopped chili and sprinkle some pepper on top.
Note:
- You can adjust the seasoning to your taste.
- You can replace shrimp with small shrimp according to your family’s preference.
