How to choose good sake fruit for making bread

  • To buy good, ripe sake, you should choose larger fruits (about over 700gr each).
  • Choose fruits with a slightly yellowish-green skin, with large eyes, no sharp thorns, and still firm when pressed with your hand.
  • Avoid choosing unripe, small sake fruits with green skin, as these have a very bland taste, are very milky, and are difficult to process.
