How to choose fresh ingredients
How to choose quality beef
- To choose good beef, select pieces that are bright red, with bright yellow fat and white connective tissue.
- Choose pieces with small, tender fibers, not too fine.
- When you press the meat with your hand, if it has good elasticity, does not stick to your hand, and has no foul smell, then it is good meat.
- Do not buy beef that has an unusual foul smell, pale color or is purple. Especially avoid soft, mushy meat that feels slimy when touched.
Suggestions for where to buy curry oil
- You can buy curry oil at grocery stores, supermarkets, and stores in the TasteVN system or purchase directly on the website bachhoaxanh.com.
- When buying, remember to check the product packaging and expiration date to ensure health safety!
Stir-frying the bread filling
Place a pan on the stove with 1 tablespoon of cooking oil and heat it up, then add the onion and stir-fry for about 30 seconds over medium heat.
Next, add 50ml of water along with the potatoes, carrots, and sweet potatoes, and continue to stir-fry for about 7 – 10 minutes until cooked evenly. When the vegetables are cooked, add the beef and stir-fry quickly.
Dissolve 20g of cornstarch in 50ml of water, then pour it into the filling pan, stirring until the filling thickens, then turn off the heat and let it cool.
Mixing the dough for the crust
Add to a bowl 1 tablespoon of sugar, 180ml of unsweetened fresh milk, 4gr of instant yeast, then stir well and let it sit for 10 minutes for the yeast to bloom like crab bricks.
Next, add to a bowl 310gr of flour, 1/2 teaspoon of salt, 1 egg, 2 tablespoons of cooking oil, and mix well until the ingredients stick together.
Put the dough on the table and knead it with your hands using the following technique:
First, fold the dough, then use the palm of your hand to press and stretch the dough away. Note to press and stretch the dough away, not down.
Next, turn the dough 90 degrees and repeat the two steps above for 15 minutes.
How to tell if the dough is satisfactory:
- The dough is smooth and elastic.
- The dough does not stick to your hands: when pressed, it feels slightly sticky, but when you lift your finger, the dough does not stick.
- You can stretch the dough into a thin film without tearing.
- Check the dough by tearing off a piece and stretching it. If the dough forms a thin film that does not easily tear and light can pass through, it is satisfactory.
Shaping the dough
Knead the dough briefly to push out all the air bubbles, then divide it into 10 equal parts.
Next, roll out the dough, place the filling in the center, and seal the edges tightly. Repeat this process until all the dough is used up.
Frying the curry bread
Prepare 2 bowls: 1 bowl for the beaten egg and 1 bowl for the breadcrumbs. Place a non-stick pan on the stove, add 500ml of cooking oil, and heat over medium heat until the oil is gently bubbling.
Take each piece of bread, roll it in a layer of egg, then coat it with breadcrumbs, and then drop the bread into the hot oil, turning it regularly over medium heat until golden and crispy.
Finally, remove the bread with a basket to drain the oil, and it is ready to enjoy.
Final Product
The fried curry bread has a golden crust, crispy on the outside, while the inside is chewy and soft, combined with a rich filling, nutty flavor of vegetables, and fragrant curry smell, delicious indeed.
This fried curry bread is sure to be a hit with the whole family.
