How to choose good walnuts
For whole walnuts
- You should choose walnuts that are intact, not cracked to ensure the flavor of the nuts.
- It is better to select larger walnuts as they are often tastier, richer, of good quality, and ensure quality.
- Choose walnuts that are uniform in size; when held, they should feel heavy, indicating that the nut inside is full and firm.
For shelled walnuts
- You should choose nuts that are firm, plump, and especially that the flesh is not shriveled or oily.
- The kernel should be intact, not cracked, and still have its skin. If the skin is removed, the kernel should be milk-white, dry, and not oily.

How to make Walnut Date Bread

Chop dates
Remove the pits from the dates, chop them, and put them in a bowl with 150ml of hot unsweetened milk (about 60 – 70 degrees Celsius), mix well, and soak for about 20 – 30 minutes.

Grind the walnuts
You can chop the walnuts with a knife or put the walnuts in a plastic bag and use a pestle to grind them finely.
Tip: Do not grind the walnuts too finely or leave them too large, as they won’t taste good. -
Mix the butter and sugar
Add 100g of butter to a bowl, add 50g of sugar, then use a whisk to mix well until combined.

Mix the egg mixture
Next, crack 2 eggs into the butter-sugar bowl, add 1 teaspoon of coffee powder (if desired), and use an electric mixer to mix until the mixture is well combined.

Mix the dough
You sift 225g of all-purpose flour, 1 teaspoon of baking powder, and 1/4 teaspoon of salt into the egg mixture, using a hand mixer to beat until the mixture is homogeneous, thick, and smooth.
Next, you add the dates and walnuts (leave some for decorating the top of the bread) into the dough mixture, using a spatula to mix well.

To stabilize the oven temperature, you preheat the oven for 10 minutes at 180 degrees Celsius.
You pour the dough mixture into the mold and use a flat spatula to spread the surface evenly, sprinkling walnuts on top of the bread.
Place the mold in the oven and bake at 180 degrees Celsius for 60 minutes until the bread is cooked.
