Basa fish stomach 500 gr Pineapple 1 fruit (Pineapple) Onion 1/2 bulb Kumquat 3 fruits Garlic 2 cloves Shallot 2 bulbs Spring onion 2 stalks Oyster sauce 1 teaspoon Fish sauce 1/2 tablespoon Cooking oil 2 tablespoons Common spices a little (Sugar/ Pepper/ Seasoning)

  • You should choose fish stomachs that are bright red because these are fresh and delicious.
  • Do not choose fish stomachs that are grayish white as these are old and no longer fresh.
  • Additionally, you should buy fish stomachs at reputable supermarkets or large markets.

How to choose fresh pineapple

  • You should choose fruits that are bright yellow from the stem to the end or slightly green in some spots, as these fruits are ripe and sweet. Evenly yellow fruits have a higher sweetness.
  • Choose short, round-shaped fruits as they have more flesh compared to long, cylindrical ones.
  • Fresh, just ripe pineapples will not be too hard or too soft; pressing your finger into the skin will not leave an indentation.
  • Do not buy fruits with moldy skin, leaking juice, or cracks, as these are signs that the pineapple is spoiled.

How to prepare sweet and sour basa fish stomach

  • Prepare the fish stomach

    After buying the fish stomach, wash it thoroughly with water. To eliminate the slime and smell, squeeze the juice of 3 calamondin limes into the bowl containing the fish stomach and mix it for about 3 minutes.

    Finally, rinse it again with water and let it drain.

    How to clean the fish stomach without the fishy smell:

    • After buying the fish stomach, turn it inside out and rub it with a little salt and vinegar, soaking for 15 minutes to remove the smell. After soaking, rinse the stomach with cold water until clean, and let it drain.
    • Boil a pot of water, briefly blanch the fish stomach for 5 seconds to firm it up, then transfer it to a bowl of ice water to keep it firm and white. After soaking for 10 minutes, remove the fish stomach to let it drain.

    Pineapple peeled, washed, and drained. Then, cut the pineapple into four parts, remove the core, and slice into bite-sized pieces.

    Onion peeled, washed, and cut into wedges.

    Shallots and garlic peeled, washed, and minced.

    Spring onions trimmed, washed, and chopped.

  • Stir-frying the dish

    Place a pan on the stove and add 2 tablespoons of cooking oil. When the oil is hot, add minced onion and garlic, and stir-fry until golden and fragrant.

    Next, add the cleaned fish stomachs and stir-fry on high heat until firm, then add the prepared onion and pineapple to stir-fry together for about 3 minutes.

    Season with 3 teaspoons of seasoning powder, 2 teaspoons of sugar, 1 teaspoon of oyster sauce, and 1/2 tablespoon of fish sauce, then stir well over medium heat until the fish stomachs absorb the spices, then turn off the heat.
