How to choose fresh pineapple
- You should choose fruits that are bright yellow from the stem to the end or slightly green in some spots, as these fruits are ripe and sweet. Evenly yellow fruits have a higher sweetness.
- Choose short, round-shaped fruits as they have more flesh compared to long, cylindrical ones.

Prepare the fish stomach
After buying the fish stomach, wash it thoroughly with water. To eliminate the slime and smell, squeeze the juice of 3 calamondin limes into the bowl containing the fish stomach and mix it for about 3 minutes.

- After buying the fish stomach, turn it inside out and rub it with a little salt and vinegar, soaking for 15 minutes to remove the smell. After soaking, rinse the stomach with cold water until clean, and let it drain.
